Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Bottle. Hazy dark amber colour with a very big longlasting off-white head. Malty fruity aroma. Aroma of dandelions. You also have the dandelions in the flavor. The flavor is also fruity and malty with some hop bitterness. Long bitter aftertaste.

From a 750 into a snifter. Beer pours a medium-dark, hazy amber color with a light tan, frothy, mostly and quickly diminishing head that leaves nice lacing on the glass. The aroma is sweet and complex: Moderately malty with notes of toasted grain, cookie and caramel; Moderately hoppy with notes of resin/pine and herbs; Heavily yeasty with notes of band-aid, horseblanket, damp basement and a trace of cheese; Miscellaneous notes of moderately weighty pineapple, peach, orange, spicy alcohol, coriander, vegetal dandelion. The flavor is heavily sweet, moderately acidic, lightly bitter with a long, lightly acidic, lightly sweet, lightly bitter finish with a nice alcoholic warmth. The body is light, the texture is watery and the carbonation is lively. A pretty pretty beer.

Cloudy burnt orange color, with the usual, beautiful Fantome head - earthy aroma, with copious amount of floral notes, some vegetable qualities - grassy, herbal flavor - a bit tea-like - the dandelions are in there in the background, along with a mildly sweet malt profile - camomile and lilac in the finish - as usual, nice stuff.

Dark orangish-red with a decent ecru-colored head. Lots of bubbles. Yeasty aroma blended with strong caramel malts and a pleasant woodiness. The flavor is also highly herbal, but I don’t really taste dandelions. Ha. Ha. I actually like the taste of dandelions anyway, but this is overall a very good beer. Slightly bitter/hoppy finish that lingers. Yum.

Robe rousse légèrement voilée surmontée d’une mousse blanche qui s’estompe. Arômes et saveurs d’alcool et d’épices.

Bottle. An orange-amber color with a foamy white head. A mildly sweet floral aroma with lemongrass, and herbal spices. A dry, flowery flavor with a touch of citrus and an an earthy finish.

2004: Very cloudy amber body with a huge head. Good lacing on the glass too. Aroma is very grassy with notes of caramel, barnyard, pepper and light spices. Flavor is mostly the same, probably the grassiest flavored beer I’ve had. Dandelions though? Sure why not. An interesting Saison.
