Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Bottle shared with HogTownHarry, GregClow & tupalev -- courtesy of tupalev. Pours a cloudy dark orange with a large somewhat-lasting white head. Aroma is floral along with some sour and sweet notes. The flavour was somewhat different then what I was expecting based on the aroma -- it’s still floral and sour but with some citrus, hops, yeast and spices. It’s quite dry and I don’t think I could drink too much of it but overall it’s pretty good.

Like many Fantomes, Pissenlit is a bold and rich Saison with a beautiful dense head and a great, juicy, mouthfeel. This one is a little more dense and tangy but very well balanced and very drinkable, if not downright addictive. Highly recommended for the Saison fan.

Bottle shared with blankboy, tupalev and HogTownHarry - courtesy of tupalev (via a trade with Boutip). Hazy orange-amber with a large, foamy head. Aroma is very herbal - definate dandilion notes along with some grass and dark honey. Flavour is sweet in the start, with some lovely herbal/floral notes, and a bit of spiceiness in the finish. A really refreshing beer - hard to believe it’s 8%!

Shared with blankboy, GregClow and Hogtown Harry - from a trade I did with Boutip (thanks!). Dark orange, small white head. Light pleasant floral aroma. Medium body. Sweet floral taste. Lightly hopped and yeasty. More body that I was expecting. 0 hint of alcohol. Incredibly drinkable, this was really worked for me - sweet and delicious. My first 2 beers from this brewery have been excellent and unique!

Pours a murky sienna color, with a beige head that fades into a ring that lasts the whole glass. Aroma of cider and earth. Flavor finishes a bit bitter, but with an interesting citric fruit flavor up front.

Bottle (750ml "printemps 2004"). Shared with blankboy, GregClow and tupalev - courtesy of tupalev. Poured hazy deep orange with a huge foamy-creamy lasting off-white head. Didn’t care for the aroma at first - strong pungent crushed mint, marigold, with sweet almost dusty malt backing it, but it smoothed out on warming, a pleasant lemony character developed. Taste was a bit unexpected, grain, orange/lemon juice, sourness and sharp bitterness, with the punget pollen and floral nature still strongly present. This one was very astringent with decent livliness, the alcohol is extremely well masked - overall I needed time to warm up to it, but once it opened up I liked it quite a bit - could *not* drink a whole bomber of it without getting a headache, though.

Printemps 2004 bottle. Dry, sour lemony, barnyard-like aroma with some sweet notes of maybe peaches or something. Bready banana yeastiness follows in the aroma, but quite citric. Beautiful hazy copper color with amber highlights and a nice frothy light light yellow head. Lightly spicy peppery and a bit sweet start. Bizarre sour astringent middle with some roasted dry, oaky finish. A bit of booze towards the end. Mild hops to finish. This is a very dry and astringent brew that is both bitter and sour. Not sure that I like this very much as it is very difficult for me to drink.

Had a aging comparison, this sample was the fresh one.
Amber tan colored, with a compact, greyish head. Dany’s Beers are usually never much to look at...Pronounced caramel and herbs, some sour cherries with that unmistakable yeast profile that screams "Fantôme", the barn he uses to brew smells just like that. Lightly acerbic, again plenty of sugary caramel and a mineral taste, but with lots of body even though it was quite carbonated, and it had a fruity, grassy finish.

This is for the aged bottle I bought straight from the brewery. He apparently found it somewhere in the barn and didn’t quite know what to do with it, I was more than happy to take it off his hands! Dated 2000, it didn’t have a cork, just a crown.
Quite a darker shade of brown, the head was more subdued and was greyer, and had a few dusky chunks in there...The caramel aroma was bit more darker, it had sort of a scotchy, oaky/vanilla aroma to it, almost as if it were aged in wood! It tasted a bit metallic at first, then it tasted earthy and more acidic than the younger one, it was salty, with balsamic vinegar flavors and a dry finish that had a more conspicuous alcohol presence. It wasn’t a unanimous favorite, but I absolutely adored it!
