Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

(Bottled, 0.75l) Very hazy dark brownish amber color (much like sahti) with a smallish head. Sourish, a bit stingy aroma of toffee, dandelion and malt. Slightly sweet and tart flavor of caramel, spices, malt, hints of rye, wood and toffee, some aromatic-flowery hops and a long, bitter finish. The dandelions are quite clearly present - while alcohol certainly isn’t. Medium-bodied palate with smooth carbonation. A bit straightforward, but balanced, nicely dry and enjoyable countryside brew. Softer with the yeast poured in, as usual. Very refreshing in mid-winter, too!

Was spared by the lion’s teeth. Sampled in the wonderful settings of Moan & Dove. Simplistic and light, lightly acidic. That as much can be packed into something like this is a great fete. Not a blow your socks off beer, but lovely.

25oz - printemps 2004 - Aroma is sweet yeast, subtle malt, banana, and a touch of a spring day accented by fresh hops. Pours a cloudy brown under a huge creamy head that leaves tons of lacing. Flavor is a bit more tart than the aroma leads with carmel malt and clove leading the way. Then the hops and what I assume are the dandelions filling in the middle giving it that wild saison bite. There is still that sweet yeasty flavor bringing in the rear. Palate is very smooth for such a flavorfull brew. Interesting and intriging at the same time and worth a try.

hazy copper. complex aroma of mustard, mint, herbs, liquorice and funk. smooth mouthfeel, medium bodied. flavours of earth, flaowers, yeast and caramel. different from other fantomes I’ve had and very good.

Oh what a beer! Well worth the price. Deep golden with a off white head --who would have thought dandelions could taste soooo good. Hoppy with nice balance; light-medium body considering the alcohol

Bouteille verte de 750 ml obtenue par importation privé via Bièropholie. Arôme: Odeur d’épices et d’agrumes. Apparence: Couleur ambrée orangée légèrement voilée. Moyen col mousseux. Moyenne densité des bulles. Fine dentelle sur le verre. Saveur: Goût d’épices, de citron et de caramel. Long arrière goût. Palette: Le corps est moyen avec une texture huileuse. Épices en arrière goût. Moyenne effervescence en bouche. (Rating #243)

Bottle: Poured an orangey color ale with a huge off-white head with perfect retention. Aroma of light spices which possibly includes cumin with some subtle funky yeast. Finish is slightly bitter but I would have expected a bit more at the end. Body is way too thin which kind of ruined part of the experience for me. Alcohol is well hidden. Overall, this is a very fine saison but I guess I was expecting another funky spicy monster which is not what this is about it seems.

Pours amber with some licorice nose.No floweres here on the nose or the palate.This was a light mouthfeel and was refreshing.
