Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Had this beer on tap - my wife and I played the beerwheel at Redbones, and it landed on this. We had no info on the beer, except the name (which I thought had something to do with piss!) Anyway, good beer, found it very aromatic and nicely textured. Definitely very citrusy and floral.

This was a cloudy lemon yellow color. The dandelions seemed to be more of a novelty than anything noticable in the beer. Then again I don’t know what a dandelion tastes like, so I could be wrong. Light and airy. Good mouthfeel. An outdoor hay, horseblanket, citrus type of taste.

Pours a cloudy medium orange color with a nice fluffy white head and thick lacing. It has a lemon/cirtus and yeasty nose. The flavor has a lemon tanginess to it. Not as much as his ’Ete’ but still a little lemon. Nice fruity and yeasty flavors too. Very nice beer.

Couleur ambrée, de nature très trouble. Arômes levurés au caractère typique des produits de cette brasserie. Organique, racines, terreux, composte et feuille d’automne se fusionnent d’une manière aussi transparente que lorsqu’on les retrouvent dans leur habitat naturel. Également quelques notes de caramel et d’écorce de citron en bouche. Corps plein et crémeux, très douce carbonatation, un brin d’amertume en finale. La réminiscence laiteuse de sève de la tige du pissenlit est marquante. Une étrange épice s’apparentant au cumin vient nous hanter tel un fantôme dans une maison abandonnée.

Hazy amber body with some floaties and a thick white head. Very good blend of fruits and spices in the aroma and flavor with a hint of grass. Creamy and smooth with a clean dry finish.

Pours a murky amber color with a thin white head. Excellent aroma of earthy yeast, herbs, grass, and flowers. The flavor has the same profile, earthy yeast, herbs, grass and flowers, but is less powerfull. Light body, creamy texture.

Bottled, vintage 2004
Nut brown. Slightly hazy (some floating yeast) .Good tanned head. Aroma has herbs, hops, yeast and caramel plus touch of barnyard. Medium-bodied, carbonated. Refreshing summer drink with good hop character. Some sweet yeasts in the background. Though classic saison, this one is quite close to some quality tripels. Warming alcohol in the aftertaste.

2004 Vintage. This was an interesting beer, especially since it was brewed with dandelions (if I only knew those weeds in my back yard could be used for something useful). This was a very nice treat.
