Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

2004 bottle. Bright amber color, thick white head and lacing. Funky aroma, orange peel, lemons, peaches, applesauce lying in grass; similar to Orval. Medium body, malt backing to a citric body, but in a lemony way, with pears and apples. Lively and soft carbonation, refreshing and easy to drink. While there may be some floral elements in the aroma, and I haven’t actually tasted dandelions, I don’t think that they are too high in the mix. Another great Fantome brew.

75cl bottle, from 2004, so its coming up on a year old I guess. Pours hazlenut with billowing tan head. Some clinging lace. Classic Fantome barnyard sour nose. Horsehair, elderberry, earth, wet roots, old lemon peels....it goes on...Wonderful malty beer, hit with a good dose of spicy bitterness and maybe a touch of lactic sourness lying beneath that. The malt lends a nuttiness to it. Man, this is what makes Fantome great. Laura says Dany is her hero. Lingering with hints of chocolate or taragon?? more like juicy tobacco maybe. I’m holding onto my other bottle of this for awhile, I’d like to see how it ages...

2004 bottled. Grassy aroma in there. Well carbonated and tasty spices and citrus. The use of dandelions was in the cartoon, but I didn’t take it seriously. I am in fact allergic to it in the spring season. I guess its good I had it in late winter. The bomber takes a long lunch to get through but doable without ill effects.

Huge off white head. Ruddy, cloudy red. Fresh baked bread comes out at first. Then you get a little hay and some fresh lemons. This seems to be partly from the dandelions. An amazing aroma of summer in a bottle. The taste is fairly dry with some fresh mown grass. Playing around in the background are notes of baking chocolate and some lemon peel zest. The finish lingers a long time on the tongue. This is a fabulous beer that showcases all that is good about Fantome and saisons!

Beautiful hazy copper hue. Pours with light-long head, complex floral, herbal, spicy, malty aromas. The body is light and thin, with greenery, dandelion salad, herbal, floral garden flavors in the palate, showing a malty-sweety note in the finish

Pours a nice amber hue with a light slight-off-white head. Aroams of yeast, malt, a little floral and funk. Flavors are quite malty, slight dandelion flavor, a little citrus, slight bitterness. Overall, another outstanding saison by the kings of the style.

This amber ale pours with a huge fluffy off-white head that dissipates slowly. There is a floral aroma and an initial spicy herbal flavor with a bitter finish. If you like the flavor of dandelions, this is the beer for you. Unfortunately for me, I found this flavor somewhat unpleasant. Pissenlit is an appropriate name, as I found it necessary to make a couple trips to the loo by the time I had emptied the 75cl bottle. Nevertheless, hats off to Fantome for trying something new.
