Commercial Description:
Light, fruity and champagne-like. Fantôme brews special seasonal beers, never repeating a recipe from year to year. This one is for spring . . .

Hazy, dark honey color with a minimal, short-lived white head. Very interesting nose of wildflowers, roses, pepper spice, grapefruit and orange peel, yeast, and a touch of barnyard. Lots of grainy depth with phenolic notes that lean slightly toward band-aid. Spicy with understated bitterness, some lightly tart acidity and more barnyard, but like a clean barnyard. Complex and nice. I want more. More thanks to axilla.

Liveliest of all Fantomes, this one is always cherrylike to me, something like a black cherry wine product. Of course, that taste is always mingling with the strange spices and mustiness that I expect from these dusty hard-to-find bottles. My last experience saw half of the bottle pour over as foam.

Cloudy gold in colour. The aromas are mildly malty, along with notes of herbs, driftwood, and funk. Flavors are somewhat citrusy, but the horse blanket / barnyard flavors were a little too overpowering. The mouthfeel was also surprisingly heavy even with the high carbonation level. I was expecting a lighter and more fragrant brew to represent "springtime". Even if this particular saison was a bit of a disappointment, any Fantome beer is better than most stuff out there.

Bottle. Golden colored with a touch of haze. Nice fluffy white head. Funked aroma with notes of light struck Heineken. Lighter bodied, very similar to a pils. Spicey flavors mix with Pils beer and then notes of dandelion sourness. Slightly drying. Nice.

Bottle: Mildly sweet skunk and yeast aroma. Pours a hazy yellow with lots of sediment and a white head. Lightly malty with a rather skunky flavor as well. Has a funky spice, orange, and yeasty finish. Skunky aftertaste. Not a big fan of this one. Thanks to wolhfs.*****Re-rate from Schroppfy’s gathering courtesy ofr Schroppfy. 2002 bottle. This doens’t even seem like the same beer as looking at my rating above will show. Sour tart and light wood aroma. Almost gueze-like but a little mellowed out. Pours a cloudy yellow with some dark sediment and a white head. Decent lacing. Lightly sweet up front with a finish much like the aroma, sour and tart with some woodiness. Original ratings of 4-3-4-3-8 have greatly improved.

Herbal grass and stinging nettles nose. Sour and acidic apple and citric notes with a fruit pepper and yeast complexity. Nice and dry with a spritzy mouthfeel.

Corked and capped bottle pours a cloudy and hazy bright golden-orange with a huge frothy clingy off white head that leaves a sticky lacing in the glass that lasts, fruity lemon, grass and funky yeasty aromas. Fruity sour apple, pear and spicy flavors, peppery and dry finish. Medium bodied with a crisp, carbonated mouthfeel, I love it.
