The aroma is very yeasty with the wild yeast funk. There is also a wooden element that is not unlike cedar and cork. Also present is a tart fruitiness and pepper. The appearance is deep amber with a small than average head. The flavor is just like the aroma. The palate is typical for the style. The finish is dry. It’s interesting but not one of my favorites.

Pours a murky amber with an off-white head. Has a tart fruity scent & a hint of barnyard. Somewhat grainy and dry for a saison. Upfront tart berry flavors with a gritty bitter finish, almost coffe like. Different.

Bottle. Pours into a wine glass with a large, puffy, billowing head. Very spicy and yeasty notes become a bit astringent on the palate, quite bready and dry, but overall a nice saison. Certainly not fantome’s best.

The beer upon its debarking the capped and corked 750ml green bottle sets in the glass a tarnished gold with a slight haze that clears after warming to the glass and room, the head is Herculean in size, creamy in texture and the color a bright white, as it slowly depletes the lace forms a thick and concealing sheet. Nose is a spicy mix of lime, wet wool blanket, sweet malt, and some wet fresh cut hay, start is sweet and has a nice grain presence, with a tartness at the back, top is light to moderate in feel. Finish is mild in its acidity with a crisp tartness that lingers long on the palate. Fantome is a magnificent brewery that produces a great many beers I love

Cloudy orange with a foamy white head. Sharp fruit and yeast aroma with hay tones. Dry and harsh flavor. Hayish with some smokey tones. Tastes like a wet dishcloth!! Quite unique like the other Fantôme I have had, but Saisons will never be my favorite....

Bottle: Mildly sweet skunk and yeast aroma. Pours a hazy yellow with lots of sediment and a white head. Lightly malty with a rather skunky flavor as well. Has a funky spice, orange, and yeasty finish. Skunky aftertaste. Not a big fan of this one. Thanks to wolhfs.*****Re-rate from Schroppfy’s gathering courtesy ofr Schroppfy. 2002 bottle. This doens’t even seem like the same beer as looking at my rating above will show. Sour tart and light wood aroma. Almost gueze-like but a little mellowed out. Pours a cloudy yellow with some dark sediment and a white head. Decent lacing. Lightly sweet up front with a finish much like the aroma, sour and tart with some woodiness. Original ratings of 4-3-4-3-8 have greatly improved.

2001 Vintage. Appearance: Looks like liquid caramel. Very cloudy. Aroma: Green Raisin, Pastures, Sweet weeds. Palate: Very hard to describe. Medium Full body. Flavor: Grass, dough, pastures. Not bad. Kinda weird. 8, 1, 7, 3, 14 = 3.3

Newer bottle. Pours to an orange body with a tall but mostly dissipating white head. The aroma is floral, apples, rose petals, and mineral water. The flavor is kind of musty but heavily mineral water and some apples and subtle paper. The palate is slightly tart and drying.

Spicy citrus aroma, herbal. Medium hops, low malt. Apple cider. Cloudy light orange amber with small white head. Medium body with medium carbonation. Starts spicy herbal bitter, low acidity. Finish is herbal bitter. Light chalky bitter after.
