Aug 19, 2005 08.19.05 750ml bottle. Dark, hazed, and lovely sunrise golden below a thinly remaining film of white foam. Aroma is fruity and sweet like a tripel, but grassy and sharp like a ligher saison. Nice. Citrus and cotton candy, strawberry jam and lemon grass. Quite light and juicy throughout. Heaps of interesting juxtipositions make this brew a delight.

May 13, 2005 Hazy, dark honey color with a minimal, short-lived white head. Very interesting nose of wildflowers, roses, pepper spice, grapefruit and orange peel, yeast, and a touch of barnyard. Lots of grainy depth with phenolic notes that lean slightly toward band-aid. Spicy with understated bitterness, some lightly tart acidity and more barnyard, but like a clean barnyard. Complex and nice. I want more. More thanks to axilla.

Jul 25, 2007 From my fall 2006 notebook. Hazy yellow color with a spicy nose and hints of what I now recognize as yeast. Earthy spice body with a clean finish.

May 21, 2009 bottle, golden orange color with strong foam that finishes as a soapy film, sweet citrus, funky aroma, barnyard, flavor is a mix of lemon, honey, pencil lead, white pepper and spice, lasting earthy finish

Jan 9, 2005 2001 vintage. Secret Santa beer #11, kindly sent by Jason (Dorwart) and brought to MrFacto’s ’Tosa tasting. Hazy orange body with a big off-white head. Classic Fantome aroma of flower petals, slightly earthy sourness, leaves and pollen. Biscuity, toasty body with flower petals and earthy hops, peppery with some yarrow-like perfumey flavors. A bit toasty. This was a 3+ year old sample, but I suspect a fresh sample would be very similar; this is nothing like the difference between fresh Fantome Saison and the 1998 vintage I tried in November. Pretty standard for Fantome overall; I prefer their (well...his) edgier offerings.

Nov 9, 2007 Bottle. Hazy amber coloured with a rather small white head. Hmm I guess I’m never gonna learn to really enjoy these saison’s. Always taste infected and like spider webbs and old moldy cloth. And this one is no different. Sorry.

Jun 12, 2005 bottle. hazy orange body with a fluffy white head. plush aroma of a potpourri with a myriad of spices. very funky.. a flavourful saison that I could easily drink on any scorcher like today. soft malts. liberal spicing throughout the body. another interesting beer from Fantôme...I’m really digging this brewery.
