Confounded aroma runs amuck with honeyed pinot grapes, greasy lemons, clean linen, subtled cackled white pepper and coriander, mandarins and mums. Flavor is blooming with herbaceous sentiments. Ragweed, pollen and pils malt cut through. Ginger and thyme. Quite the hoppy little number as well. Semi-sugar starved papaya flavors meld with rancid and sharp grapefruit rinds. Soured apricots, but never cresting. Lacks a certain fullness. Big, clean and bitter scrape takes a partial layer off the palate. Mildly effervescent, lacking sweetness, and even more hidden by the bitterness input. Slight trace of alcohol in the finish and prickly pincers tick at the tongue’s tip. Its flavor is fruity and quite a bit more sour than most saisons I have tried. Its refreshing character is much appreciated, since it is 100 degrees F here today and of course my air conditioner just broke down. Beautiful saison aroma, peaches and yeast. The flavor is also nice, the hops are much more prevelant than expected, dry fruity-spicy flavors mix well. Body is medium. The finish is dry with a touch of astringency. Maybe not the most complex offering from Fantome, but certainly an excellent beer! Very nice with some sunlight hitting it. The nose shows some orange peel, nice yeasty character, earthy, nice barnyard funk, some spice coming through, mild sweetness, cardammom/coriander? The flavor is very nice, especially with this weather. Nice and crisp, light, easy to drink. Lots of character, orange rind, spice, yeasty funk, estery, some sweetness. Of course, that taste is always mingling with the strange spices and mustiness that I expect from these dusty hard-to-find bottles. My last experience saw half of the bottle pour over as foam.
