Jul 10, 2005 25oz - Aroma is pungent with wet hay, swampy green growth, and tons of spices. Pours a nice thick head over a cloudy yellow body leaving great lacing. Flavor is tangy and musty, layered with spice. The yeast and malt show up, but only for a minute. Palate is sticky and bubbly. An intriguing and fun brew.

Mar 16, 2007 Blind tasting at Sombeast’s house
This was one of the middling saisons of the six that I tried blind. While it was not flawed I did not find it to be outstanding. I have no idea what vintage we sampled but it lacked something. While I do not expect saisons to be extremely complex I would like a little bit of character.
Aroma / Appearance - Creamy vanilla, flowers, peach and honey form a sweet but relatively neutral nose. Nothing about it sucked me in; in fact I was rather indifferent about trying it after the bouquet. The caramel body had a temporary foam head which was quick to pass.
Flavor / Palate - Mineral water, lemons and wheat bread form a midafternoon snack. After that comes a light dessert with bitter semisweet chocolate decorating cherries. It has a solid but not compelling finish. I might drink this if offered it but it did not wow me into wanting a bottle for myself.

Nov 7, 2009 Lots of spice. Intense flavors. A saison that will knock you out. Very yeasty. Tangy. Fruity. Wow. Enjoyable.

Sep 10, 2009 750ml Bottle (Delirium, Brussels) - Amber/brown with a foamy head. Sweetish aroma with hints of apple, pear and some spicy malt. Sweet, fruity and malty taste with pear and spicy malt. Tasty and drinkable.

Sep 29, 2009 Bottle. Pours clear gold with a medium white head. Funky aroma with lots of malt, some fruit and a bit of skunkiness. Banana yeasty flavor with sweet malt and a nice sour grape influence.

Sep 12, 2004 Cloudy gold color with almost no head.
Musty/earthy aroma. Flavor starts off
tart with unidentifiable spices in the
background. Finishes crisp, clean and
dry. A really nice saison.

Jun 11, 2006 Bottled 750. Beer is a clear medium-light orange with a large, frothy, white, mostly lasting head. The aroma is malty with a light note of toasted grain, a trace of caramel; Hoppy with a heavy note of herb, moderate note of lemon zest, light note of green grass; Yeasty with a light note of basement; Light miscellaneous notes of mint, white pepper, spicy alcohol. The flavor is moderately bitter, light acidic, moderately sweet with a long, slightly warm, lightly bittersweet, trace-astringent finish. The body is medium, the texture is velvety and the carbonation is lively.

Mar 25, 2007 some lemony flavors that go with the spring feel of this beer. it’s like fantome always knows what exactly to match up the seasons with the flavors. theres some lemongrass, some alfalfa, and some white pepper, anise, and honey. some floral notes and apple with hints of raisin and sour cherries. not as much funk in this one as others which is oddly disappointing.
