Tosa Tasting ala Silphium. 2001 bottle. Hazy amber color with a moderate off white head. Pale malt, licorice, rose and goldenrod aromas. Caramel and mild citrus flavors. Mild spice comes later. LIght and full all in one. Perhaps this one is getting dated, I’ll be looking for a fresh bottle to compare.

Bottled. Very strong and nice aroma with grass, flowers and very herbal. Pale golden color, white head, good lace. Light sweet, bitter, grass, herbal. The flavors much less strong than the aroma. Little dry. Exceptional tasting beer. No non-Fantome beer matches this one in any way.

Bottle @ RBSG 04’ Grand Tasting
Clear orange color, nice head & lacing. The aroma has bright hops & a decent barny malt & brettanomyces nose. The flavor is full & yeasty with some fruity light hops. Fresh & clear for Fantome, but still good.

Bottle from Cock & Bull, Sarasota, FL. Poured hazy orange color with a minimal fizzy off-white head that mostly lasting with fair lacing. Moderate yeasty sour tart fruit aroma. Light to medium body. Medium sour citrus flavor with a medium bitter finish of moderate duration.

Bottle at ZBF 2006. Amber colour with no head. Yeasty malty aroma. Malty flavor with some spicy hints. Refreshing with a bitter aftertaste.

This one poured hazy dark golden in color, with a huge fluffy white head. The head never eroded, and caused numerous repours. The aroma was spicy and citris, with some hops and funky malts as well. The flavor was floral and spicy up front, with hopcit, multiple fruity, and barnyardy elements at mid-palate. Medium and very carbonated on the palate. Another winner from Fantome.

Deeply hazy golden ale with a thick big bubbled white head. Nice spicey yeast aroma with notes of lemon, oranges and herbs. In mouth, funky herbal tatse, with lemony notes, and acid points. No alcohol noticed. Winter 2005

Head is initially large, frothy, white, mostly lasting. Body is hazy medium yellow, bottle conditioned. Aroma is lightly malty (toasted grain), moderately hoppy (herbs, flowers), lightly yeasty (barnyard), with notes of white pepper, honey, clove, dried pineapple, a country meadow bursting with flowers and small furry creatures. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, moderately acidic, moderately bitter. Light to medium body, watery texture, lively carbonation. Quite an aromatically hoppy little Fantome, this one...smells like a blend of Saaz and Hallertauer. Wonderful balance, extremely quaffable yet deliciously sippable, with a bright, fresh, and varied aroma of both noble hops and country air’s splendor. Awesome, just jaw-droppingly awesome. No way it’s 8%, though...tastes like 5-6%.
