Apr 25, 2004 Tap, ZBF 2004. Faintly hazy gold, low white head and moderate condition. Spicy fruit and yeast in the nose with some cinnamon and mulled wine spices noticable, full bodied sweet and tangily spicy in the mouth and a powdery dryness in the finish, but still with a lingering spiciness.

May 1, 2004 Bottle. Blonde color, cloudy. Strong peppery aroma with seaweed, licorice, coreander, orange and sesame seed. Sweetish flavor with lemon, grapefruit, licorice, sesame seed and coreander. Wit less emphasis on the added herbs this would be a great beer, now it’s a good beer.

May 13, 2003 Hazy oarnge/brown. Big,frothy,off-white head. Aroma mainly hoppy(grassy,woody),has some lightly sweet malt and yeast aromas as well.Creamy mouthfeel but a little to bitter and fizzy.Earthy(hay,soil)malt flavors,,with a ton of hops in the mouth lingering.Finish is lightly sweet,yeasty,with a lot of hops.

May 16, 2004 Hazy amber w/ sediment. Creamy, dense off-white head. Spicy, fruity, slightly yeasty aroma w/ a touch of soya sauce. Light, effervescent feel. Fruity & malty w/ a peppery finish. Some bitterness.

Jul 29, 2004 Orange gold color. Medium head. Aroma is fruity and funky. Touches of leather and must. A medium bodied ale. Malts are fruity and sweet. Very funky, bananas, leather and musty. Dry finish. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly bitter with a little bit of funk.

Jun 6, 2004 Large white head, good retention with a thin, broken lace. Hazy, pale straw color that has a glow when held up to the light. Musty, yeasty nose, co2, light maltiness and fruit hints. Light/medium body, well carbonated., co2 bite. Lightly bready malt flavors with plenty of flowery hops. Dry finish, tastey Saison.

Oct 10, 2004 Hazy caramel colour with a nice tan head-reminiscent of apple cider. Aroma of spice, apples, sugar and floral hops. Medium-bodied; Spicey pepper flavour with some mushrooms and tons of other nuances. Overall, a great and complex beer that makes it hard for me to differentiate all the flavours, as usual from Fantome! I sampled this 75 cL bottle on 15-May-2004 at the May RB Party in Toronto, Onatrio.

Jan 9, 2005 2001 vintage. Secret Santa beer #11, kindly sent by Jason (Dorwart) and brought to MrFacto’s ’Tosa tasting. Hazy orange body with a big off-white head. Classic Fantome aroma of flower petals, slightly earthy sourness, leaves and pollen. Biscuity, toasty body with flower petals and earthy hops, peppery with some yarrow-like perfumey flavors. A bit toasty. This was a 3+ year old sample, but I suspect a fresh sample would be very similar; this is nothing like the difference between fresh Fantome Saison and the 1998 vintage I tried in November. Pretty standard for Fantome overall; I prefer their (well...his) edgier offerings.
