Apr 25, 2004 Tap, ZBF 2004. Faintly hazy gold, low white head and moderate condition. Spicy fruit and yeast in the nose with some cinnamon and mulled wine spices noticable, full bodied sweet and tangily spicy in the mouth and a powdery dryness in the finish, but still with a lingering spiciness.

May 1, 2004 Bottle. Blonde color, cloudy. Strong peppery aroma with seaweed, licorice, coreander, orange and sesame seed. Sweetish flavor with lemon, grapefruit, licorice, sesame seed and coreander. Wit less emphasis on the added herbs this would be a great beer, now it’s a good beer.

May 13, 2003 Hazy oarnge/brown. Big,frothy,off-white head. Aroma mainly hoppy(grassy,woody),has some lightly sweet malt and yeast aromas as well.Creamy mouthfeel but a little to bitter and fizzy.Earthy(hay,soil)malt flavors,,with a ton of hops in the mouth lingering.Finish is lightly sweet,yeasty,with a lot of hops.

May 16, 2004 Hazy amber w/ sediment. Creamy, dense off-white head. Spicy, fruity, slightly yeasty aroma w/ a touch of soya sauce. Light, effervescent feel. Fruity & malty w/ a peppery finish. Some bitterness.

Orangey-brown and opaque from the yeast that I got since it was the end of the bottle. Wispy tan covering. Fruity aroma of banana and apricot with strong notes of the yeast esters and some powdery peach and perahps a bit of higher alcohols. House flavour of woody grape with a nice bit of sweet malt and significant bitterness. Light to medium body with medium carbonation and a little lingering bitterness.

Aug 13, 2008 Clear orange amber with a fleeting head. Mild cheesy funk aroma with dry cooking spices ( please don’t ask ). Full, frothy mouthfeel. Nice grainy bready malt flavors with salt, cloves, and other spices. The mystery that is Fantome continues....

Apr 21, 2005 Herbal grass and stinging nettles nose. Sour and acidic apple and citric notes with a fruit pepper and yeast complexity. Nice and dry with a spritzy mouthfeel.

Dec 17, 2007 750ml bottle. The aroma was the best thing about this saison because it was so interesting. Celery, grass, lemon, lime, butter and honey with a light hint of bandage. The average to large white head was frothy. The body a dark yellow. The flavor was moderately sweet and lightly bitter and moderately acidic. Dry finish with a strong and unpleasant aftertaste of Band-Aid. Medium body and lively carbonation.
