Commercial Description:
We took our Imperial Stout and put it into 12 bourbon barrels to age for 6 months. 8 of those barrels aged in the cooler, and the end result was named “Eclipse”, and put both on draft and into 22oz bottles . The remaining 4 barrels were aged at room temperature, and though excellent, was not quite the same as Eclipse. We didn’t want to confuse people or brands, so we simply called that beer “Barrel-Aged Stout” and only serve it in draft at the brewpub. It is 9.5% ABV.

Draught at the brewpub. The board said that this was 9.5%abv. Black with a small tan head. Great aroma that is a rich showcase of bourbon-barrel aging, with lots of caramel, vanilla, dates, raisins, oak, bourbon, and dark cherries. The flavor is heavy on milk chocolate and caramel, but has a dry, woody, bourbony feel with a light alcoholic bite. There is some dried fruit as well before a warming and dry finish. Medium-full bodied with smooth, lower carbonation. Lots of bourbon, but very well integrated. The only thing that I thought held it back was the light tannic astringency in the mouthfeel.
