Commercial Description:
For 2009, Imperial Eclipse was aged in three different types of barrels. This entry is for the bourbon-barrel aged version, which was aged in Elijah Craig barrels this year and is dipped in purple wax.

2008 description:
We bottled up 14 cases to deal with our Christmas-New Years crowds. We are planning to bottle approx. 1000-1200 more 22oz bottles. We are waiting on a bottling machine (not bottling line) which can do 4-5 bottles a minute. The machine should be here next week and we’ll get after the remaining Eclispe and get it into bottles. The first bottling of the 2008 vintage came from one barrel... A Pappy Van Winkle barrel that held Bourbon for 23 years. We have 7 more of these barrels ranging in age from 17 to 23 years. The next bottling is a blend of three of these barrels. The blend which will be marked ’2nd bottling’ or something to that effect so they can be identified. The remaining 4 barrels will be split into draft and yet a third bottling. The 2009 Eclipse will be aging longer than the 2008. The 2008 aged for 180 days and the 4 remaining barrels are most likely going to hit 225 days. We are brewing the base Imperial Stout in March allowing us even further aging time prior to it’s mid-December release... The amount produced will increase from 17bbls to 34bbls for ’09.

WOW, I have not been this impressed with an Impy for quite some time. Dark chocolate, toasted oak, coffee and caramel nose. Clean and decadently rich on the palate with an almost delicate mouthfeel. Very complex and rounded with flavors that compliment each other from beginning to ever so wonderful lingering end. Todd may be Flossmoor’s loss but he is definitely our gain.

Bottle shared by kmweaver on 7/17/08: Pours a mostly opaque black with dark mahogany edges and a thin-lacing wispy light tan head. Aroma of sweet dark caramel and chocolate with some molasses and roasty coffee complexity. Body starts fairly full and rich dark chocolatey sweet with some toffee flavors and espresso balance with good carbonation throughout and mild bourbon character before a slightly warming bittersweet dark chocolate finish. A very nice, smooth yet complex imperial stout.

literally the last bottle from the brewery, hand numbered, shared by kmweaver, thank you so much!!! a damn tasty brew. black pour with brown head, a good bit of bourbon and vanilla on the nose and in the taste, but nicely balanced by some sweet licorice and malts. still had a slight hop tingle too, and barely hot, nicely done!

Poured from 22 oz., dark brown with medium-small tan head. Bourbon and citrus aroma, with hints of chocolate and coffee. Taste was well balanced, malty, boozy. hoppy. Overall very good.

Bottle courtesy SamGamgee. Pours inky black with a dark brown frothy head. Aroma is bourbony but not too hot. Rich chocolate, molasses, vanilla, raisins. Complex but a little muted. Flavor is really smooth and everything is in nice proportion to everything else. Oaky, coconutty bourbon without the typical ethanol shot, dark chocolate, roasted malts, dark fruit. Rich but a bit slick in mouthfeel. Very drinkable.

Draught at Bistro Barrel Aged Festival 2009; 2008 vintage. Just a stunning beer from start to finish, and just so happens to be my 1400th rating. Black with a small tan head that leaves a slick of foam. Super rich bourbon, chocolate, vanilla, wood and brown sugar aroma. The flavor is just as complex but with a smoothness that was out of this world. After my first sip, I just looked at my buddy mike and said "Holy shit, this is amazing!" Nothing out of place, and rich, yet not overly sweet and thick. The bourbon adds character without being at all hot or sharp, and the body is perfectly silky and smooth. The only beer at the festival that really came close was the 2009 version, though it wasn’t as smooth. The best stout that I have had in a very long time, and a true testament to what barrel-aging can do to a beer.

On tap at Bistro Barrel Aged Fest 2009. Possibly best of show, and that’s saying a lot. Jet black with a small tan head that leaves a little creamy foam on the beer. Aroma is amazing - rich chocolate, roasted malt, bourbon, and vanilla. Flavor is incredible and complex, with lots of chocolate, roasted malt and caramel, molasses, vanilla, oak, dark fruit notes, and very well-balanced and non-overpowering bourbon. Full body with a slick, creamy mouthfeel. This is really an amazing beer. Where do you find these guys’ bottles?

22oz bomber shared by Ken--thanks! 2008, bottle 531. Deep brown pour with a 1/2 finger cinnamon head, good retention. Bourbon, chocolatea. light pepper and roast in the aroma. Flavor is very much chocolate-forward with a good amount of bourbon--bourbon covered chocolate! Full body with smooth light carbonation. Excellent BA IS.

Thanks to Sam for this. Black body. Aroma of vanilla, oak, chocolate, and chalk. Flavor of raisins, bourbon, chocolate, and vanilla. Nice full body.
