Commercial Description:
Ever wonder what motivated Johnny Appleseed to promote the planting of apple orchards everywhere? Mom's apple pie? Guess again. In those days making the best of those long, cold winters started with fermenting the apples with the most flavor into cider. Putting up as many barrels full of cider as possible was kin to filling the wood shed with enough wood to survive the winter. Our Celtic Cider is a blend of dry-farmed organically grown apple picked at the peak of ripeness. Just prior to bottling, we add a wee bit of local star-thistle honey to our dry still cider. Within a few months, this dosage of honey will ferment, creating a slightly sparkling dry cider. Enjoy now with a hint of sweetness, or later as the champagne of bottled ciders. Fitzpatrick is the original (and the best to our knowledge the only) organically grown cider. Only 220 cases produced. Slainte. Made with mostly Gravenstein apples with some Baldwin apples. Fermented with champagne yeast.

2001 Vintage. Bottle purchased at the Davis, CA Farmer’s Market. Aroma is apple-like with some light mustiness as well as some sweet honey-like aroma retronasally. I almost detect a little mead-like aroma. Appealing aroma, nonetheless. Transparent pale golden body with a spritzy, light bubbled whitish head that dissipates quickly and leaves a nice white lacing. Start is very tart and carbonated. There are some light apple flavors present, but this becomes quite dry and a bit ethanolic. Finish tastes exactly like pimento olives/pimento olive juice. Definitely a unique cider. I am not horrifically familiar with Gravenstein apples, nor am I familiar with 5+ year old ciders. This just kind of lacks a lot of the apple character and flavor. It is definitely unique. I personally this it is ok (because I don’t mind the olive flavor), but I can see this not being enjoyable to some people.
