The balance is just excellent, porter flavors combined with a nice pepper bite to it. I’m a big fan and this is a good improvement over the somewhat dull regular cygnus. Pours is black with a small head. The pepper jumps out right away in the aroma. It smells natural and spicy, like dry peppers. Some light roast behind that melding well with the pepper. Taste starts some chocolate but then the pepper kick in hard. The pepper flavor sits in the back of the throat and burnsssssss. First sip greets me with a nice burn of the peppers as well, as well as a few seeds from the pepper and somthing else inside the growler. A good amount of spiciness in the aftertaste. The second grolwer consumed, we squeezed the juice from the pepper into the beer, it amped up the spice factor a good bit, and had my mouth burning for some time, great! One piece of advice, I bit the tip off the pepper, it wasnt very hot. So i took two more bites, and thought I was about to cascade down into the depths of hell! Skyview (4007), Papoose Jct., Minnesota, USA Dec 4, 2008 Sampled at the brewery via growler during Release 5 day on December 4, 08. Pours a near opaque dark brown brew with a thin off-white head that dissipates to a fine film and thin white ring. Aroma is mostly ancho and green bell peppers. Additional scents include coffee, some green vegetables, toasted dark malt, and a touch of raisin. Taste is medium bodied with some light carbonation along with flavors of green peppers, toasted dark malt, some nutmeg, raisin, a little cinnamon, and some fresh spiced tomato paste. Finish has a mild and long lingering spice pepper aftertaste that over-powers all other flavors. A tad spicy during the finish but not over the top like some other fire-brews.
