Todd does love him his Belgians, and for a change of pace, has made this one with sage honey. There's a thin, but long-lasting, lacy head over a body the color of... all I could think of was the tummy of a Hawaiian hula dancer. Yes, a bit of sage and a few other spicy flavors. I catch a suggestion of apple juice. Taste of caramel or darker malts, very little hop bitterness to get in the way. Coats the mouth with a suggstion of a well mixed bourbon and water. Just a fabulous beer.
Ernest (4250), Boulder, Colorado, USA Mar 17, 2004 Draught, GABF 2003. Body is dark yellow. Aroma is moderately malty (cookie), lightly hoppy (herbs), with notes of clove and alcohol. Flavor is heavily sweet, lightly acidic, lightly bitter. Finish is moderately sweet, lightly acidic, moderately bitter. Medium body, watery texture, lively carbonation, moderately alcoholic. Pleasant, but little more. Eyedrinkale (3111), Beer Town, New York, USA Jan 8, 2004 Updated: Apr 16, 2004GABF '03. Amber color with thin but lasting tan head. Mellow honey taste. I was hoping to hate this because I'm not a fan of sage, but the hop bitterness makes this a decent tripel. JorisPPattyn (4500), Antwerpen, Belgium Oct 2, 2003 (draught) Yellow with a green shine. Slim white, fluffy head. Nose of honey, flowers, like a Mediterranean pastry, but very delicate. Suggestion of sweet (honeylike) withour being really sweet. There is plenty of malt, however. Medium-bodied, yet the delicate touch remains, not betraying its alcohol. This is another great try by Todd. Delicate flavours in a huge beer - nothing like a Belgian tripel however. lemonlovr (183), Lockport, Illinois, USA Oct 1, 2003 Had this at the 2003 GABF. Sweet honey/fruity smell. Appearance is good amber color. Flavor is strange and not expected based on aroma.
