Commercial Description:
Belgian styled Lambic. Aged for one year in a white wine barrel, this golden ale is unblended and noticeably tart. Subtle fruit flavors accompany a mild oak finish. Debuted at GTMW 2009. 6% ABV, OG 12.5, 25 IBUs.

FoBAB 09. Pours a brown orange color with a thin off white head. Tart nose with lots of red fresh fruits, citrus, slightly earthy and slightly acidic. Citrus earthy flavors that blend with the fruit and brett. Dry citrus finish. Solid beer, good work FS!

A - Smells sour. Tart fruit. Candy like. Some hard to detect wood notes. A - Brownish red into snifter, with a white head. F - Sour cherry, fruit, funk, and a dry oaky end. P - Champagne like. Crisp, prickly, bitter tingle. Thin. Nice carbonation. O - Nice sour/lambic. Not overly familiar with the style, though I’ve enjoyed a few. Will be a New Years Resolution. MORE LAMBICS! No solid base or benchmark for comparison, and can’t really pick out subtle characteristics amongst. Was not offensive. Enjoyably fruity as a beer. Though I despise when bartenders ask "Have you ever had a sour? Would you like a taste first?". Ow. Rookies.

I had a couple of these at the Festival of Barrel-Aged Beers, Chicago 2009. Why? Because it’s damed tasty. The aroma had both sweet dark grapes and tart red grapes along with some sour cherries and a splash of vinegar. The flavor had an addition of Brett funk and trodden dry grasses along with a besmirched crabapple. Very nice.

What a surprise...a really impressive unblended lambic. Big lactic tartness, huge sour profile, vinous grape notes, brett funkiness...it’s really got it all going for it. Keep these coming! Matt’s final recipe he left aging away nicely in the cellar as a going away gift to those of us he left behind, I think. Great job Matt!

Sampled at FoBAB 09. Pretty cool that American brewers are taking on unblended lambics. Pretty funky, fruity aroma with some nice tart notes. Dry, sour flavor with earthy brett, maybe sour apples. Pretty solid overall.

FOBAB 09. Pours light brown with a beige head. Aroma is of oak, malt, grass, fruit, and funk. Taste is very earthy, almost dirty which leads into a tart cherry taste with a decent amount of wood as well. There is a very earthy malt base to it, but it is lost within all the fruit and funk. Has some subtle wine characteristics that causes each sip to end with a long-lingering taste of grapes and funk. Slight oak in the finish. A solid beer.

FoBAB tasting. Poured a flat amber color. Ohhh the sourness was so good here. This was a dry, tarty, funky taste. An overall solid lambic.

FOBAB 2009- pours a hazy brown with red highlights. notes of leather, plastic, lemon, and grapefruit, white grapes, and wood. nice and dry. good and quite refreshing. nice to see all flossmoor hopping on the lambic train. Hoping to see a gueuze in a couple years!
