Commercial Description:
There is nothing hypothetical about the Dark Matter that has ended up in the serving tank at Flossmoor. This 9.5% Russian Imperial Stout is rich and complex with coffee, dark chocolate, and slightly burnt tones. The hops are mostly for balance in this intense, big stout. medium to full-bodied with a gentle alcohol warming. Some of this stout will be kegged on coffee beans and re-released when the icicles are forming off our noses. Enjoy some now!

On tap at Flossmoor. Pours black with a foamy tan head. Aroma is of roasted malt, chocolate, dark fruit, grain, and vanilla. Aroma came off more as a sweet stout than an imperial stout. Taste is of chocolate, roasted malt, grain, caramel, and vanilla. Way more grain than I expected, which isn’t a bad thing. Lingering grainy wood taste. Some strange lactic notes in the beer, which threw me off a tad. Mouthfeel is creamy and very sticky. Drinks easy enough though.

On tap at Flossmoor. Pours chalky black in color with a creamy tan head. Smells like a dry stout, which is to say the aroma is mild. Tastes predominantly of baker’s cocoa, coffee, licorice, earth, and toasted malt. Very subdued for an RIS, but comforting all the same. Reminds me of what I expected Theobroma would be like.

Pretty black pour with substantial brown head. First sip seems a bit watered down for the style. Some substantial roast in the flavor, but nothing really robust or "imperial" about it. Chocolate, cream, vanilla, and coffee...they’re all there, but seems a bit thin, watery, and airy to my way of thinking. Just OK

tap at flossmoor station. Notes of nuts, roasted malts, dark chocolate, toast. for an impy stout, quite light bodied and drinkable. This is really 9.5% abv? some coffee notes as well. pretty good. a sessionable 9.5 % abv imperial stout.

Arriving for lunch at Flossmoor I scored a goblet of this prior to my food. Dense and thick it took quite a bit of time to work through but the reward was a decent enough imperial stout. Flossmoor has probably done better - this is more like a pumped up standard stout than a full scale imperial like others in the area.

Aroma / Appearance - Creamy tan foam surfaced above a sticky black body which at least gave the impression this could be a heavy hitter. Semisweet chocolate chips, vanilla, wood chops, and crisp hops remind me of a cool fireplace in which the ash has just cooled down.

Flavor / Palate - Sweet with a woody vanilla undertone this is only lightly bitter. Still it takes some time to finish thanks to the almost 10% ABV. Coffee, raspberries, and chocolate wrap up the taste experience prior to a dry finish. If there is a flaw it feels a bit delicate for an imperial stout; if you happen to get this for takeout do not let it sit around and age.

Tap at brewery with tjthresh: Opaque with a creamy small head and spotty lace. The aroma has notes of milk chocolate, toast, vanilla, tobacco, espresso, and herbal hop. The taste is very chocolaty and malty with hints of plum and raisin. Earthy and leathery notes leading towards a coffee and minerally finish. The mouth feel is soft and smooth but honestly needs more body. This is nothing more than an amped up milk/chocolate stout and a far cry from the Impy offerings of the past from Flossmoor. That said it is okay.

On tap at Flossmoor Station, served in a goblet. Near black pour with a thin head of creamy, dark tan foam. Good retention and some slippery lace. The aroma had chocolate, burnt caramel, and charred malt. The flavor contained chocolate, charred malt, dark fruit skins, and also some burnt rubber. Full-bodied and lightly carbonated. Just okay. Hopefully the coffe version will allow this some time to mellow and develope more complexity.

Pours opaque black with some brown head. Chocolate milky nose with some herbal hops. Rich milk chocolate flavors with some dark berries. Full body with a dry finish.
