Pure golden in appearance with a nose of banana liqueur. Flavor held a decent, thorough sourness with the pleasure being held in the lingering aftertaste of bananas and cinnamon. Medium bodied, yet seemed thicker with a warm, syrupy texture down the throat.

Nice pour on tap good head light gold color. Alcohol sweet aroma, after dinner beer for sure. Sweet tasting with a nice kick.

This was originally the St. Benedict’s Tripel, but when Matt took it to Night of the Living Ales, the others brewers were suprised he hadn’t named a "baby beer" for his new daughter, as is tradition at Goose Island. So it’s named "Ella’s Epidur-Ale" on the taps at Flossmoor. Draft, served by Matt. Deliciously light copper color. I picked up a taste of honey, which Matt admitted to adding only to get more ferntability. Bit of a cream sherry character. Strong and warming alcohol feel adds to a buttery feel (I mean buttery in a good way.). I had a feel for some ginger, but Matt said he added no spices to this at all, so it’s just a function of the yeast and whatever Styrian and East Kent Goldings hops were put in. Sweet, tasty, and great in the Trappist glass they serve it in.

Poors a dark gold with thin white head. .Floral, sweet aroma with a hint of the 10 percent abv in this. Starts off with a sharp champagne-like sweetness. Alcohol. hop bitterness. A little spiciness here too. Another solid effort matt.

Nice gold color with lazy bubbles and a slender white head, this ale has a warm aroma of cherries, plums, and some flowery hoppiness. Smooth and warm with alcohol, it has a sharply sweet malt flavor with light juicy fruits and hot spices. Having a warming, sticky sweet finish, this is a friendly drink.

Floral perfumey aroma. Light spice and herbal flavors barely mask a pretty prominent alcohol presence (I’m not complaining!) I think I’m tasting coriander and cloves. Nice malty sweetness as a base note. Another experimental brew by this brewmeister, who doesn’t seem to be afraid to take a few chances. He keeps me coming back in to see what’s new!

Cask (Night of the Living Ales!): Orange gold with a slight haze. Surprisingly fruity aroma: juniper berries, pears, white grapes and a touch of orange peel. The yeast play is on the fruity/alcoholic dough side away from the spicy clove/citrus rind side…wow, the flavours are unexpectedly spicy: bits of coriander and a peppery/clove effervescence, if only they could have bottle conditioned this to bolster the lacking carbonation, it would be great!

Cask at the Night of the Living Ales. Clear golden body with almost no head. The aroma is sweet and estery with loads of banana, clove, honey, various spices, fruity esters and a bit of orange. Fairly good body, but a bit thin and could use some carbonation. The flavor is good, sweet but not cloying, slightly spicy. The spices come through a lot more in flavor A tasty beer that would benefit from more carbonation.
