Commercial Description:
It may seem like we say this every time we release a Wild Dog beer, but our newest brew really is Flying Dog's most unique beer to date. Collaborator Doppelbock was created through Flying Dog's Open Source Beer Project, which gave amateur brewers a chance to give our brewing team recommendations and feedback on the everything from the grain, hops and yeast to the brewing process itself. We combined your feedback and created a unique Doppelbock recipe to brew up and release.

Collaborator has a full body with a sweet malt profile and a slight roast character. The complete recipe and printable labels are available for download at www.OpenSourceBeerProject.com. We want to thank everyone who contributed to creating this beer, it truly was a collaboration.

Bottle pours a medium brown color with a butter brown color head No carbonation pop when the bottle was opened. Buttery figs and raisin aroma. Caramel and butter in the body. Slight bitterness at the end. A bit funky for a dopplebock. Average beer. But was pretty decent paired with bbq chicken.

Brilliant copper color with a frothy tan head, very nice pour. Sweet n’ spicy molasses aroma. Smooth chewy mouthfeel. Decent bock flavors of bready malts, with an earthy lager yeastiness. Not too bad.

Pours toward the amber side of mahogany into the glass, with an initial froth that diminishes to a thinning ring with light soap lace. The nose is of toffee, aerated sugars and some esters. The flavors let down a smidgen, with muddy malt, esters, roasts and a back-palate hop and ABV that aren’t necessarily discernible from one another. The mouthfeel is decently smooth and slick, but this really gets muddy as a discernible doppelbock. Kudos for the effort as the first truly mass-marketed open-source brewing project!

Pours clear amber with a medium sized tan head. Odd aroma of pear, sweet biscuit and vegetal. Creamy texture with a caramel taste. Finishes bitter and is warming.

Pours a golden brown with a smaller bubbly off white head that left some light lacing. Aroma of toffee, sweet malt, dark fruits, fruity, very floral and citrus. Flavor of grainy sweet malts, toffee, nuts and dark fruits.

Ruby with a light tan head. Aroma is light malt, toffee, light alcohol. Taste is a light caramel, light alcohol, some toffee. Bland.

Pours a ruby red to brown hue, thin ring of off-white foam quickly dissappears, great clarity. Nose of melanoidins and bread crusty, rye character, touch of caramel. Flavor is bock-like melanoidins with a strong rye backbone, touch of sweet nut and grain malts, low hop flavor and bitterness, slight grassy and roast tones, hints of oak and bourbon linger in the back, finishes dry. Medium-full bodied, low carbonation, watery slick texture. Overall a pretty good, but not quite great, doppelbock with a nice range of flavors that is usually not found in this style, kudos to Flying Dog on this collaboration!

Bottle 75 cl. Courtesy of Theis. Pours a clear and warm amber with a small off-white head. Fat and intense aroma of pumpernickel. Quite full-bodied with loads of roasted malt and pumpernickel. Solid American hoppy finish - a lot hoppier than the German originals. But a fine example of the style. 160109
