Commercial Description:
Irish Valley Spring Bock - a classic Helles caramel bock, light in color, not in body. Contract brewed by Gray’s Brewing for the Fountain City Brewing Company anf the Monarch Tavern.

The last batch of Prairie Moon from Grays Brewing, on tap at the Monarch Tavern in Fountain City, Wisconsin. Viking in Dallas, WI will be supplying this brew in 2008. Pours a semi-hazy dark caramel amber brew with a decent off-white head that quickly dissipates to a fine film and ring. Aroma of some fruity/caramel malt, brown sugar and some mild bitterness. Taste is medium bodied, some extra carbonation with a touch of caramel malt. Finish is very light, slightly grainy with a semi-sweet bitter aftertaste.

Draught sample at Fountain City Brewing Co. in Fountain City, WI. Dark amber-caramel color with touches of lacing and head...light, pleasant aroma of brown sugar and burnt herbs, a nice mix of sweet and stinging...touch smoky and bitter at the front of the taste, caramel coming in the middle to leaven the harshness, but the finish is just a bit too burnt and tarry for pleasure. Not a terrible effort I guess.

On tap at the Monarch tavern in Fountain City, WI. Dark gold to light amber with a white head. Great head retention. Slightly malty aroma. Sweet caramel toasted flavor is rich and pleasant. Thicker body than the other offerings by Fountain City, but not a heavy lager.
