Commercial Description:
This is an exciting new style of beer that we call Irish Pale Ale. This delicious beer is pale in colour, has a full well balanced hop flavour and aroma, a good foamy head, a carbonation level similar to standard lagers. Now you can, of course, make it as complicated as you like by adding various chemicals and preservatives to the beer so that it ferments and matures faster, has a longer shelf life and is cheaper to produce. However, as a small independent craft brewery, we believe in using traditional techniques and think that only the four basic ingredients of beer should be used to produce this wonderful, thirst quenching, “magic potion”. All we want to do is produce a pure and natural beer for the Galway market. Nothing more.

Had it at the Bull & Castle Gastro Pub, Dublin. This pale ale with nice malty tones really does have something to contribute to the pale ale constellation. It’s a brand new brewery, only around since the summer of 2006. I expect great things from them.

Keg at Bull and Castle, Dublin. Lovely IPA, refreshing with lots of hops. Grass, flowers and bitterness. Lingering finish. This would be great with food. I find no flaws with this beer, a bottle conditioned version should sell well abroad.

Tap. Nice medium brown body. Small white lasting head. Quite heavy aroma of fruits. Fresh heavy fruity flavour, which is a bit sourish too. Very good and refreshing. Light sweet finish with a tad bitterness. (Porterhouse, Dublin, 07.05.08)

Unfortunately there are few enough really good Irish brews. This is one of them and unusually it isn’t a stout. Quite low in alcohol with lots of (American? Cascade?) hop biterness this is a real treat.

This is a great tasting pale ale. A lovely copper colour when pours with a balanced biscuity taste in the mouth and lovely hoppy finish on the palate
