A huge white cap that looks attractive in the glass. Surprisingly moderate palate compared to its strength in alcohol. Fresh apple flavour with a good share of malt and a bitter finish. For being a wild yeast beer I thought it would be more wild and yeasty. and funky. Pretty balanced with a little hops and caramel in the finish. Sweet, fruity malt aroma with some caramel, yeast and a bit of green apple. Flavor starts off sweet and malty with some caramel and doughy bread before turning mildly tart on the finish. The aroma is sweet malty with light notes of both caramel and yeast. The flavor is sweet matly with primary notes of caramel, but also light notes of dust, hops, and citrus - I guess it all stems from the hops. I find it good for being Frensh.
