The brewer’s continued struggle for brewing integrity is the inspiration for this dark Belgian-style Dubbel. Imported Belgian malts and dark candi sugar, along with a special strain of Belgian yeast, provide the authentic Belgian fruit and spice flavors. 12 oz bottle from Capones. Poured almost all head to the point I immediately feared an infection. The immense head was light beige and velvety and sat on top of a deep dark chocolate brown body. The aroma seemed to backup my fear of a possible infection with lots of sourness, slight chocolate, yeast, toast and a hint of dark fruit (plum, prune, raisin). The body didn’t have that explosion of bubbly carbonation like most of the other infected brews I ahve sampled so it left me with hope that this wouldn’t be a drain pour. Medium to slightly thinner bodied with a creamy mouthfeel. The flavor wasn’t nearly as sour and infected as I was expecting but still not sure if the sourness in this beer was the brewer’s intention. Flavor had distinct sourness through out, slight chocolate, slight raisin, brown bread and yeast. Hmmm, after reading some of the other ratings I think this bottle may have been slightly off but maybe not. I would like to try this at the brewpub to get a better feel for it but still it wasn’t half bad.

Brown cola colored with thin tan head. Mostly dry, slightly bready aroma. Fairly dry and bready taste with a sour raisiny edge. $3.5/12oz

batch #2 8.3% via zathrus13... pours hazy and a shade of cherry stained wood with a small tannish head. very perplexing floral aroma.... consists of tart fruit/cherries, red grape juice (not drink), a bit of smoky wood, bubblegum, malt sweetness and some vanilla. the flavor is a baffling one... it is very warmly spiced with a defined mineraly brett character and almost parching dryness. yet, it is very malty with notes of tart cherries, caramel, savory yeast, vanilla, flowers and faint cocoa. tartness is amplified on the finish when the dryness takes over to clean off the palate. it is medium bodied though light compared to the style and terribly easy drinking considering the abv%. i don’t know about these beers being smarter than i.... 8/4/8/4/17/4.1

Bottle. Brown pour with a tan head. Aroma is fruity, yeasty, sweet spices and some bready notes. Flavor isnt bad but not amazing. Typical bready, yeasty, fruity notes with some odd tart flavors which didn’t really make sense.

bottled. Pours a clear, dark brown with amber highlights. No real head or lacing, very still. Aroma mostly of sour, candied apples and cherries plus a little Belgian yeast. A little chocolate as it warms. Flavour starts out with the expected malt and chocolate but then ends with a funky sourness. Quick finish.

12oz. Bottle: Aroma of Brett, sour mix, and a hint of dark fruits. Not smelling the raisins, plums, etc. that others have. Poured brown with hints of amber and ruby in color and small, dense, creamy, tan head that lasted as a film on top of the beer. Cloudy. Sparkling. Full of small and medium-sized particles throughout. Flavor is medium sour and light to medium sweet. Tastes of Brett, sour fruit, light cocoa, light wood, slight chicory, slight caramel, malts, slight plum, and slight raisins. Medium body. Sticky texture. Average to lively carbonation. Tart, malty, caramel finish. Did they bottle the wrong beer here?

Pours deep dirty brown with a sturdy tan head. The aroma has toasted malt, Belgian yeast, brown sugar sweetness, anise and a bit of must. Medium aggressive body with quite a bit of carbonation. The flavor start watery with lots of anise, then dryness. It is very light on the Belgian yeast aspect and maltiness. There is some sourness and some lingering weird funk.

Bottle. Pours cloudy brown, with a off white head. Aroma is malt, and dark fruit. Flavor is malt, cherrries, and some spice. This gets better as it warms up a bit.
