Commercial Description:
It is mashed from George Sawyer River Bottom Pale Malt, some caramel malt and not much else. Only the first running of the mash are used. It is hopped to around 60 IBU’s but the complexities of the high alcohol and residual sugars more than offset the bitterness and it tops out at around 9.8% alcohol. This ale goes through a minimum of 12 months of cold conditioning, as this exceptional ale will be housed in once used Jack Daniels oak casks blanketed by a bed of dry hops for more than twelve months. The result of this hand crafting process is a beer that you will want to savor and share with friends.

Swing-top bottle 2002 vintage poured a clear reddish brown with a minamal amber head. Aromas of bourbon, dark fruit and brown sugar. Palate was medium bodied and crisp. Flavors of dark fruit and bourbon with a flat, lingering bourbon finish.

Tap @ Toronado Barley Wine Festival from an oak barrel from June 2001 to January 2003. Brown reddish color with a brown head. A little harsh and woody. Some earth in the aroma and flavor. A challenging barley wine and in a form I'm less familiar with.

On tap at the 2003 Toronado Barleywine Festival. Brewed in an oak barrel from 6/01 to 1/03. Smells like a freshly cut Christmas tree. The oak flavor really stands out and knocks into you. Mama said knock you out. Thick and smooth. Light fruit flavors of canteloup, plum and bubblegum (I *know* this isn't a fruit). A lot of bourbon flavor. Experimental but a good barleywine.

On tap at the 2003 Toronado Barleywine Festival: Huge bourbon flavor. Too much. Nice underlying maltiness. Still, way too much bourbon. Unbalanced.
