Unfiltered.
De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

Bottle courtesy of dchmela. Wowsers, this is good. Deep golden hazy pour with orange tint. Yeasty sour nose, some great leather and horseblanket as well as some strawberries and notes of acetic acid. Lovely dusty aroma. Not overly sour on the palate, but definitely tingles and has a great little bite on the back and sides of the tongue. Playful and fun, and oh-so-delicious.

Bottle opens with a wonderful pop and strong whiff of sour tart cheesy gueze! Dark golden/orange pour with sparse large bubbles and a white sudsy head. Strong dusty, yeast aroma that stings the nostrils. So super tart and sour. Great cheesy finish. Mild acidity, doesn’t bother the throat at all. Medium/light body with light but larger fizzy carbonation.

Bottle at Barley and Hops Tavern. Nearly flawless Gueuze, holds it’s head nicely in a flute, with dominant sour nose which gets better as the temperature rises. Very complex ranging from grassy to lemonade each sip. Palate fatigue starts to kick in half-way through the bottle due to the tartness, which is good, because you can taste the subtleties when your brain shuts down the sour sensation somewhat.

37.5-cl bottle at Delirium, Brussels. Deliciously mineral, sour and yet balanced with a depth that was lacking in the white label Girardin (tasted side by side).

Strong apple aroma with a nice head. The flavor is an extremely tart apple. The flavor lingers, and even intensifies, after each sip is finished.

Cloudy yellow with white head. The beer was very interesting to taste. It has tastes of sour lemon with a touch of mustiness (old cardboard). Not overly sour but not really my kind of beer.

Stone Brewing class on Sour Ales taught by Tomme Arthur of Port Brewing/Lost Abbey. (I lost my tasting notes so this is the best of my recollection.) An excellent gueze with a strong sourness but lots of complexity an development. Smells and tastes of citrus but also a sweet bitterness. Strong and very dry. I really liked this one!

38cl, from De Hopduvel Gent, easy to drink sour brew, very complex, balanced, clear, small head, good brew, the best of the Girardin-range
