Unfiltered.
De houten ton is een Gallische uitvinding, die gebruikt werd voor het gisten als voor het bewaren van wijn als bier. Ten opzichte van de amforen hadden ze veel voordelen : ze waren lichter, konden een grotere inhoud bevatten, waren minder fragiel en waren ook nog handiger, want men kon ze rollen. De tonnen en pijpen die Breughel schilderde kunnen zo afkomstig zijn uit het tonnenmagazijn van elke Pajottenlandse lambikbrouwer (of daar nog staan ...). Houten tonnen werden algemeen gebruikt tot het begin van de vorige eeuw.

Poured cloudy yellow with a bright white head and nice lace. Aroma is musty and sour. Flavor is lemon, sour, yeasty, apple-cider notes. Finish is dry and acidic--very refreshing.

Pours a hazy golden color with suspended particulates and small white airy head. Nose is tart, fruity,cirtusy and green apples. Initial taste is salty which explodes in sour acidity and freshly peel oranges that makes your mouth water. Barnyard funk, green apples, and champagne all arrive to the mid palate. Finishing with a sharp bitter astrigency, apple cider and wood notes. Mouthfeel is soft and smooth, light to medium body. Great head retention and splash lacing of the glass. Palate duration is good. Very tasty but was looking for depth and complexity.

bottle. pours a hazy honey with a thinnish white head that fizzes away quickly, but remains as a film. my! how tastes change! just six months ago, this would’ve been described the same, but rated rather harshly. and now, it’s just amazing. sharp lemon and orange zest in the nose, with background hints of sweaty funk, oak, and honey malts. lemony flavor, with the malt playing a much larger role, some vegetably barnyard and woodiness, rounded off with a few brighter and more colorful fruits, like orange again, and maybe some very subtle hints of sour cherries and even strawberries. sharp but not puckering sour finish, nice and dry, and with a nice light and pleasant sweetness. fairly light of body, oh so quenching, each sip beckons another. i was surprised by, and like, how malty this gueuze is. i was expecting a bit more complexity, but it’s definitely the right beer for the right time at the moment. very, very good.

Bottle courtesy of purfock: Poured a orangey color lambic with a huge foamy head with excellent retention and some good lacing. Aroma of green apple and tart is really great. Taste is a complex mix between some green apple, some sour and tart notes with some light funky barnyard notes. Full body with great carbonation. I appreciated that the level of acidity is manageable and doesn’t totally overrun the complexities.

Tasted 2008-02-28. Bottle of unknown date. Pours almost clear, dark yellow with white head. Aroma: Barnyard, sour apples, citrus. Flavours: Very sour, acidic, citrussy and just a tad bitter in the end. Very dry mouthfeel. More balanced than your ordinary gueuze - I like it!

Hazy amber with a fleeting white head. Strong aroma is everything i like about this style; musty earth, hay barnyard, cheesy, mold, dandelion. Light, lively mouthfeel. Taste is first tart sour with wheat flavors and oak, lemon, hay, barnyard. very complex and refreshing drink here, love it. 3297
