Perfumey aroma laced with leather, brett, matchstick, and tangy cedar. Rich essences of musty wood coupled with sour, slightly medicinal cherries, raisin, and minerally cherry stones. Feathery carbonation. Somewhat expansive. Moderately sour with iron and rich cherries chased by a delayed spike of brettanomyces and tannins. Musty oak, minerals, and cherry stones add lots of firmness to the body, drying it out and amplifying the irony tartness. Relatively low acidity, as well, with just enough lemon zest astringency to impart some roughness to the body. Subtle pale malt huskiness helps thwart the medicinal flavors. Finishes semi-dry, yet very full, with waning brett and heightening medicinal notes. With a more assertive husky pale malt and leathery brett character and a pinch more dryness, this would somehow manage to be even more stunning. Boutip (2404), Gatineau, Quebec, Canada

Aroma is quite complex mix of lightly sweet cherries and some sourness. I was quite surprised by the balance between the cherries and the sourness as I drank this beer. Definitely a change from your juice/sugar added fruit lambic that are more commonly available to me. Wish I could drink some more of this wonderful drink. Rastacouere (5565), Montréal, Quebec, Canada

Light candy pink head, insanely sticky, just anywhere a bit of glass is free, this head will go and grab a seat forever. Aroma shouts cherry over every montreal’s roof. Deep honey, battered cream lactic acidity. Sweet meringous, funky, cheesy, leafy. Multi-dimensional aroma just like I enjoy them, but the focus is really funky dessert oriented. Rather sweet palate, more than I expected anyway with just a touch of lactic acid, smooth with clover and leaves notes. Light and easy to drink. Opaque cherry-red with frothy pink head that recedes with some nice lacing. Sweet cherries, cinammon, very clean flavours contrast nicely with lightly sour lambic character.
