Commercial Description:
Bottle conditioned.
Ingredients: Water, Styrian and Saaz Hops, 2-Row Barley and Caramel Malt, Yeast and Granulated Beet Sugar.
Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops.

12oz bottle. Bottled on 072705. Thanks for holding onto this for me Brent! The color of glowing ore! lotsa happy bubbles racing about, slightly off-white head stays fairly intact. Restrained, quiet aroma...especially by comparison to its model. I can detect some faint wild yeast character...maybe even faint perfume, but this is very restrained and I have to really dig into the glass to smell it. Metallic finish at first drink, without so much of a bite as Orval. Wild yeast mingles lightly with the malts...fairly malty beer really. Well attenuated, but not dry. The metal in the finish fades after a few sips, but the bitterness still doesn’t show up, yet there is some nice hop play in there, flavorwise. This seems all-around to be a much softer version of Orval, and thus lacks any great character. If you are basically selling the Orval story on your lable, I need more. Why do something that’s already been done better? Inspiration is respected, but creativity is lacking here.

Bottle. Pours a clear golden/orange beer with an offwhite head. The aroma is sweet, fruit with orange and notes of yeast. The flavor is sweet, malt with caramel, fruit and yeast. The palate is dry and spicey. Overall a good beer.

Nice golden orange pour with beautiful off white head. Complex aroma and flavor of tropical fruits and spice with a bit of wild flower honey. Was put off a bit by a rather distinct flavor of burnt transmission fluid. Need to try again in another setting.

12oz bottle. Pours a light amber colour with a big, dense off-white head, leaving a thick, soapy lacing. Yeasty aromas with some clove, orange and biscuity malts. Lots of initial sweetness, caramel and fruit with yeastiness and a dry spicy finish with some light herby bitterness. Medium body, mildly warming on the tongue, soft carbonation and a lasting bready aftertaste. Bottled on: 08/09/08

2009 Bottle (22.April.2209/14h10 Batch):
Nice golden coloured body with a copper tint, orange highlights and almost no head at all. Aroma of honey, yeast, curacao, resin, pine and a touch of hops. Full-bodied; Strong chewy body of yeast, curacao and a good set of spices, including coriander seed and maybe a touch of acetone - odd. Aftertaste is a bit refined, only spruce and yeast coming through with a touch of honey and a light sweetness. Overall, a pretty decent beer - but nothing amazing. Shows well, but I prefer many more belgies to this one - a ton from Belgium and a bunch from the States too. I sampled this twelve ounce bottle purchased from Chevy Chase Wine & Spirits in Washington, DC on 25-July-2009 sampled at home in Washington on 10-December-2009.

Pours golden, good head with some lacing. Tastes like lots of sugar, caramel with subtle bite at the end. Lots of carbonation. Very good.

Bottle. Clear honey colored body, with a medium white head. Aroma is sweet honey, yeast, light hops and caramel. Flavor is caramel, yeast, hops and malt. An okay beer.

Aroma of molasses, brown sugar and chocolate. Appearance was red gold with creamy head. Flavor of burnt toffee, caramel, malted chocolate and cinnamon. Palate was bubbly. Interesting beer for the style.
