Fruit, raisin, light chocolate, toffee, and yeast. Fades to a big collar and whispy skimming on top and the lacing is drippy with a textured webbing lightly leaving spots and strings as it dwindles.
Murky, dark aroma of plummy stuff and lightly vinous qualities with a nice notion of mint-like yeasty spice, some molasses and cooking sugars, and purple grape juice.
Taste is quite nice here; clean, unwavering, very well rounded with dark candied sugar flavors as plum, currant, and raisin mix in with a lightly chewy fruit cake backing drizzled with caramel and light spices. Slivers of orange creep around the back end as it warms slightly with a tiny backwash of black licorice and some residual brown sugar pinches. Nice!
Feel is perfect. Super clean with a lightly bready, chewy center that holds a very solid medium heft and great length in sugary dark candied fruits. Nice gradual build up to the warming kick in the finish that reminds you you’re drinking a Belgian beer. Wonderfully slick, quick, and tasty.
I would if I could, drink a bunch of this stuff, but the 8% does hit a bit later with a bit of warmth. Oh so nice a drinker though. Gone in no time. A solid Belgian brew. larsga (2937), Oslo, Norway Nov 1, 2005 Big, offwhite, creamy head with large bubbles; body clear dark red. Deep aroma of caramel, bread, and spice. Taste is broad and sweet, with some alcohol heat, settling into an aftertaste with faint roastiness and lots of spice. Licorice. Nice balancing aftertaste, which lingers. Excellent! One of the best beers made. Probiere (992), Iowa, USA Oct 29, 2005 I wasn’t planning on rating this. I grabbed what I thought was the Carolus triple, and then noticed it was pouring red-brown. Oops. I find their triple too sweet for my taste, but this was marginally better. The syrupy notes were still there, but the addition of some darker malts gave it some raisiny, plummy, figgy, date, and dough flavors. The finish was a little murky, and I would appreciated some more hops, but overall a little better balanced than the triple and easier to drink. A ton of yeast, though. Taste is mmm, theres soemthign wrong here, similar to aroma, but with a kind of bitter malt whiskey liquirce distorting the goodness. Maybe this bottle wasn at its best but the taste just wasnt living upto what the aroma had to give. CampbellWilson (533), Scotland Oct 10, 2005 Bottle from Beers of Europe. Dark brown, creamy head. Lovely malty aroma with chocolate, vanilla, raisins, banana. Smooth and creamy mouthfeel. Warming finish. Very good indeed. Cornfield (4892), Oak Forest, Illinois, USA Oct 8, 2005 This is a quality brew, pouring a deep nutty brown body with a dense, fizzy tan head. The aroma is toffee with raisins and brown sugar and a hint of alcohol with mayhaps a touch of chocolate. Slightly spritzy in the mouth, it delivers a flavor of sweet toffee, dark fruits, burnt brown sugar, some chocolate, a bit of smokey woodiness, and white peppers. The finish is sweet and alcohol warm. Very good.
