Aroma is caramel, molasses and hint of alcohol. The initial palate is quite sweet, giving way to fruity esters of overripe banana, raisin and, perhaps, port wine. Deep cloudy dark brown (poured in all the yeast) with good head and plenty of lace. Smells DIVINE, sweet dark smooth brown sugar, rum and raisins. Tastes even better, smooth, sweet then dry and crisp. Almost perfect palate with a slightly warm and dry alcoholic finish. God this stuff is good; Trios Pistols sans the slightly off bits. Aroma is dominated by plumb and a bit of yeast, quite strong actually. First sip is pretty sweet on the tongue, plenty of other flavours.. Plums, raisins, a bit of coffee or chocolate. Spicy tang balancing the thick malts, coffee, rum and raisin. This is very good. May sneak off and grab some more. 5000 (2409), Hardened Liver, Washington, USA May 22, 2005 Bottle: Burnt orange, brownish, medium foamy beige head, attractive lacing. Huge plum and licorice aroma. Soft notes of other dark pitted fruit as well. Dark and pale fruit on the tongue, both strong. Soft licorice and even chocolate is present. Fairly sweet up front, with a soft hop bitterness on the back end. Fairly big body, with a moderate mouthfeel. Plum, apple skin, minor maple syrup, and chocolate all linger after the finish. I wish I had two or three bottles of this.   Simply delicious!
schuimkroaat (391), Leuven, Belgium May 13, 2005 33 cl bottle, bbe 5th Aug 06. Turbid brown with a strong red shine, small off-white head, sparkling. Malty and sticky odour with a lot of brown bread. Beautiful flavour of caramel and carob with gentle hop bitterness towards the end. Full body, a bit (too) sticky texture. Papsoe (14613), Frederiksberg, Denmark May 12, 2005 Updated: Jan 8, 2006(Bottle 33 cl) Deep reddish brown colour, light brown head. Very refinened malty charamel flavours well balanced with the hops. Extremely high gravity and hence a very full body. A very refined Belgian Ale with lots of sweetness, but never cloying. When I first had this in 1993 it was just called "Gouden Carolus" at 7% ABV and came in a bottle with no label. In 1997 it was changed to "Gouden Carolus - Carolus D’Or" at 7,5% ABV and now it’s called "Gouden Carolus Classic" at 8,5% ABV. So it has changed quite a bit but is still a truly Belgian classic. 240793
