Very refinened malty charamel flavours well balanced with the hops. Extremely high gravity and hence a very full body. A very refined Belgian Ale with lots of sweetness, but never cloying. When I first had this in 1993 it was just called "Gouden Carolus" at 7% ABV and came in a bottle with no label. In 1997 it was changed to "Gouden Carolus - Carolus D’Or" at 7,5% ABV and now it’s called "Gouden Carolus Classic" at 8,5% ABV. Sweet flavour of dark malts, caramel, fruits. Good mouthfeel though far from the same as in the Carolus Christmas ale. A great beer.

Pours a clear, deep ruby with a huge tan head that settles down to a thin layer that stays for the remainder of the drink. Not much lacing. Aromas of dark fruits, rust, yeast, caramel, with black licorice dominating. Taste is bubbly up front with overripe dark fruits, plums, chocolate malt. Lots of velvety mouth coating. Aftertaste is dry. Alcohol is non-intrusive but you can definitely feel this one. Rich and powerful but medium-bodied and refined. Dervock (183), Emu plains, Australia
