The cork pop was loud, and shot across the room almost hitting my wife (yikes!). The aroma was honey, must, candied grapes. The flavor was candied apples and grapes, firm honey presence (almost mead like w/ some floral aspects), wheat notes. No hop presence in the finish for a triple, and the yeast was also noticeably absent. Mouthfeel was smooth, honey/mead-like. A nice twist to the style, very interesting, not an orthodox tripel. Aroma is quite complex with a mix of yeast, hops, malts and something sweet like some orange. Taste is just incredible with a perfect mix between sweetness (this beer gotta have some candi sugar in it) and the hops. Alcohol is not noticeable at all, which is great when you have a 9% ABV beer. Aroma was yeasty, spicy, with dough and fruit/apples. Pretty unimpressed with the flavor, based on the high average that this beer has. Not bad tasting, but was a missing something that would have brought the flavors together. Moderately sweet. Pronounced yeasty and doughy flavors; some fruit.
