The aroma is milk and bakers chocolate, vanilla, oak, roast, fig, molasses and earthy yeast. The taste starts very sweet with big chocolate overtones but the surprise comes when you are done drinking it and the sublime heat of the Cayenne suddenly shows up. Additionally there is an oaky, earthy, and coffee quality to this beer. The mouth feel is strange, chalky and syrupy but then that spice dries things out. The addition of the Cayenne pepper makes this interesting for sure but alas it is something I am not sure I would want again. I would rather have any of the other Yeti’s versions over this. That said, I bet this would rock with a good Mole Negro.

Taste is sweet milk chocolate and this bottle has more alcohol flavor noticeable than the other Yeti’s in a side by side tasting. Has a white pepper spicy finish. Pours a deep drown almost black with a menacing, dark brown head that has good retention and leaves spots of lacing. Aroma is pears, Mayan chocolate. Mostly spiced, baked, Bosc pears. Taste really is just overwhelmed by cayenne pepper. There is a good authentic Mayan chocolate presence, but it gets lost in sort of the fruity sweetness of this beer. Fluid aromas of yeast, bitter chocolate, malted milk and greens. First bitter bite, and a heated finish. Surprisingly light, with a distinct chocolate finish. Green, piney, vegetal hops are a bit of a clash with the delicate malt flavors. Though the beer could use more balance and less alcohol, it works as a light stout with a spicy hop presence. We paired it with a delicious sea salt and chili dark chocolate produced in Antigua. Clear dark dark red brown color with a large, creamy, good lacing, mostly lasting, light brown head. Aroma is moderate to heavy malty,roasted, burnt, chocolate, moderate wood - oak, light vanilla. Flavor is light heavy sweet and bitter with a long duration, chilli - peppery burn finish, very dry. Body is medium, texture is oily - creamy and smooth, carbonation is soft. The aroma is dark chocolate, vanilla, a little bit of soy sauce, oak, marshmallow creme, and a hint of licorice. The flavor is vanilla and chocolate right off the bat. It starts off rather sweet, but tones down fairly quickly. A mellow, creamy sweetness then comes in with the first real inklings of hops. The finish has a little bit of earthy bitterness to it, along with a noticeable oak character. There’s something in there that I assume is the cayenne, but I would not have noticed it if I didn’t know it was there. Quite a tasty beer. Caskalefan (43), Bellingham, Washington, USA

This is what I wish Southern Tier’s Choklat had tasted like...drier than that fine brew, and more drinkable...the heat is very mild, but definitely livens things up, and helps dry out the residual sweetness. The balance is perfect, and so is the body...not too thick, but just creamy enough to carry all that flavor. The finish is extremely long, and terrific.
