TAR (2010), Boulder Co., Colorado, USA Sep 22, 2004 Cask-conditioned: Cloudy ruby red. Loose, but sticky and fluffy, pink foam. Delighful aroma of medicine, leather, and chalky yeast. Softly floral with an understated medley of raspberries and brett. Soft body. Low carbonation. Leathery commencement acompanies the gritty yeast anchor. Minimally tart and funky, with dabs of iron and unripe melon acidity. Subtle, but evident, pale malt presence. Short-lived brett note. Finishes with an ever so slight brett flavor, topped with flower petals and dried herbs. While this is certainly on the right track, it’s not deep enough [in tartness, dryness, brett, etc.] to fully satisfy the Lambic aficionado. However, it is a solid introductory Lambic.
