Pours a dark, highly effervescent mahogany with a 3 finger, chunky beige head that has great retention. Aroma is caramel, toasted wheat bread, apples, dark fruit, earthy notes, spice and overripe cherries, as it warms lots more dark fruit comes out and the apple notes become a little more like underripe apples-sharp notes. Flavor is caramel, fresh wheat bread, lots of sweet bread spice, cloves, raw yeast, light cardboard, a little roast and dark fruit. Lots more dark fruit as it warms. Finishes with overripe fruit, cardboard earthy hops and light medicinal notes. Palate is medium bodied, kinda sticky on entry leading to a somewhat dry finish and a sticky feel on the lips. Not a bad brew overall, I have had a few bottles of this stuff (the 2007) over the last year or so and I would sadly have to say that it has passed it’s prime, but I can’t really say that for sure, I’ll have to try another in a couple months.

The aroma picked up molasses, caramel, and biscuity sweetness accented by star anise, peppery yeast, and a hint of rum.. quite soft, and well-presented. The flavor found honey, molasses, and caramel at the core.. earth, white pepper, and nutmeg around.. finished with more molasses and dark spices, plus a light hit of peppery alcohol. Medium-bodied at most on the palate, with heavy, filling carbonation on the palate.. almost watery and unsubstantial at times, but still tasty. Gypsy19 (653), California, USA

Pours a deep ruby/garnet red with a small thin light brown head. Aroma is mainly of sweet malts and brown sugar, much like regular Gulden Draak. Also there is a nice typically Belgian yeast-funk in the background. Wow, I’m really surprised by how dull the flavor is; I didn’t expect this lackluster flavor. Flavor has a little sweetness, and the yeasty funk returns, lending a flavor not much unlike old rubber bands. Other than that it’s very unsubstantive. I mean, just bland. Of course it’s just human nature for me to compare this to the glorious regular rendition of Gulden Draak, and maybe that’s why it’s kind of a letdown. Average mouthfeel for the style. Medium viscosity. Appropriate carbonation levels. Really, it’s not bad, it’s just not the malty, sugary, caramel bomb that is the regular version. Maybe this one should be the regular version, and the other should be the sweet soulful Noel; That would be less perplexing a configuration. Nice dark reddish brown with a big fluffy tan head.Flavor is also typical with just a touch of a metallic taste which put me off abit. A little thin as well. Fluffy off-white conglomerate head with excellent retention leaves spider lacing as it recedes. Dark pit fruit aromas. Little bit metallic flavour wise which let’s it down. Hints of spice and fruit, little cinnamon maybe. A solid Belgian but it’s my favourite style of beer and there are a lot better.
