The slightly effevescent beer is wonderfully tart and earthy. Mushrooms, dough, earth and minimal strawberry all show in this refreshing lambic. The classic lambic aroma lifts into the nose, with a pungent mushroom-like earthiness, distinct goat-like tanginess, and the completely unique lambic funkiness. A hint or a swirl of green strawberry fades in and out. Pours an even hazy straw golden, with little carbonation or head. Flavor is precise and tart. Green bitterness is immediate. Any strawberry flavor is fleeting and hard to pin down. It comes up as a faint bit of jamminess in the back of the throat. Some rubbery yeast characters and then a faint floral sweetness. A kind of bland, flaccid acidity and then some dry shortbread. I’m honestly quite underwhelmed with this. I like my lambic with some carbonation and if supposed to have fruit, hit me with some damn strawberries. Mediocre.
