Commercial Description:
This is the result of blending black cherries lambic of different ages followed by a second fermentation in the bottle. Storage is similar like geuze. All bottles are champagne corked and can be reserved, in normal conditions, for more than thirty years. It is obvious that an amazing taste evolution takes place.

Bottled sample. Bright pinkish red in colour with moderate carbonation. Aromas are of sweet cherry, lemon, and a bit of wood. More sweet cherry and lemon in the mouth, along with a funky cream cheese finish. Fairly light bodied with a fair bit of sourness. Not overly complex or concentrated, but fairly drinkable nonetheless.

Color between pink and red, depends on the angle. Not much head. Aroma is only kissed with cherry, most of the character is the tart citrus and wood of Hanssens classic geuze. The lemon juice notes from the geuze combined with the cherry become more of a grapefruit. Diggin’ it.

Bottle sampled on 09/26/08 at Night of the Funk. Pours a cloudy red with a small light pink head. Aroma and flavor is quite tart and funky and sour. Some sweet cherry, maybe some fish (?), and acidic notes. Pretty good but a little acidic and there was something odd about it that I couldn’t pin down.

Bottle from 08 Night of the Funk. Aroma of funked up cherries. Flavor of wood, acidic cherries, bretty cherries, just marvelously classic. No bells and whistles, but so fantastic.

375 ml bottle. Clear, dark red body with a thin, disappearing head. Aroma is an acidic sour, cellar note and cherry. Flavor is sour, acidic, cherry and dry, bitter wood. Very dry finish.

Ruby red color and cloudy with a good sized white head. Aroma is sour and fruity. Taste is of tart cherries fresh off the tree that mellows to a soft sweet cherry taste. Dry and delicious.

375mL Bottle. Noses rather strongly, with a very goaty and cheesy lambic punch. A bit of bacteria, some alcohol and lots of acidity. Strong. Pours a burnished brick red, with edges in deep orange and thin white rose rim. Flavor is thick and sour. Wow. My palate has calmed down, because this is tart. The cherry flavor isn’t as expressive as I’d like, but it’s still nice. Aged tasting. A bit of red currant, oak barrel and wild mustiness. Fragrant. Puckering. I think the cherries have really added another level of sourness, that goes above an beyond the immediately noticeable lambic tartness. Dusty a touch. Cobwebs sweep out the lemon juice finish. Enjoyable, but restrained in the fruit palate.
