Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Black with a limited but dense grey head. Chocolate and liquorice in the aroma, and some herbs too. The flavour is marked by coffee, caramel, dark chocolate and berries.

Pours a dark brown with a slightly tan head. Chocolate and coffee aroma and taste. No fruit apparent. More like a thin porter than anything else. Enjoyable.

I like this beer one of the best I have had.black with a small off white to tan head.This smooth and complex beer is fruit with a smokey finsh.Good start to finsh I would love to find the cask version.

Another pretty decent beer from these guys. I’ve had a few from them that was WAY past their prime but this one and a best before date of June ’08, so we were good. An aroma of tart berries (underripe strawberries came to mind) with just a touch of roasted malts and wet dirt. Appearance pours out a dark brown, nearly black body with a thick creamy head. Mouthfeel had a minerally quality to it. Flavor had a nice combo of smoke, peat, fruit, and coffeeish malts. Not sure how much of this I could drink, but 1 bottle was just fine.

Bottle courtesy of DownsouthGav. Pours black with red edges. Thin tan head. Aroma is dark fruits, hops, slight coffee. Taste is fruity, berries, smoky, creamy. A little rough round the edges but a nice beer.

purchased at 99 bottles in federal way, washington. pours black with a red tint when held up to the light, medium size khaki head, okay lacing. smell is of sour fruit, some cocoa, a roastings in the back. taste is of tart berry, some milk chocolate, hint of caramel, hint of vanilla, ends sweet & sour with a bit of bitterness in the back.

Bottle. Chocolate. pours a pitch black beer with a small beige head. Coffee malty, chewy, coacoa, hops taste. Can’t really detect the elderberry. There’s also some smokiness like a rauchbier-lite. Interesting but somewhat unbalanced brew.

What’s not to like? A fruity smooth stout with the aroma of its roasted barley, good stout like thickness, no coffee. And elderberries are as healthy as wine because they are blue, seriously.
