Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Poured into a pint glass, producing a black body with a medium tannish-brown head. Aroma was of a dark roasted chocolate, with slight berry notes. Medium to strong bitterness throughout the tasting with a roasted coffee palate with an earthy dirt taste at the end.

Pours a thick black. Aroma of Malt and berries. Taste is very dry at first and kicks in with a nice berry finish.

Pour is a black with a tan head. Aroma is friuty and cocoa. Flavor is much of the same some fruit but more of a chocolate aspect. Decent beer with nothing to say bad about it, it just did not do anything for me in the way of a stout or fruit beer.

Bottle. Deep brown/black appearance with thin medium-brown head. Chocolate dominates the aroma and flavour, with mild berry fruit peeking its way through. Like a drinkable fruit-filled boxed chocolate. Very appetizing, with good depth and evident high-quality ingredients. A remarkable fruit-accented beer.

Pours a motor oil brown with a thin brown head that quickly disappears into nothing. The aroma is like if you mixed a porter with some fieldberry jam, with some notes of roasted malts, and coffee, and then the aroma sort of rounds off with a fieldberry jam scent. Flavours again, are slightly porterish at first, but finishes on a sweet berry flavour. Tasty.!!

12 oz bottle Pours a dark brown colour with a medium frothy tan head. Nose of red fruits, cocoa, and light roasted malts. Initial taste of cream, roasted malts, berries, and cocoa. Moving into a tangy cocoa berry. Palate stopping chalky dry finish. Mild bitterness lingers. Medium body. Decent head retention and lacing of the glass.

Bottle shared with a friend.... Bacon! This beer dominates with a smokey bacon taste.Absolutely horrid taste, with a lasting aftertaste which is equally bad. Smell was of roast, peat, more bacon in the nose. Stay away for your own palate’s sake.
