Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

poured a nice black hue with a tan head, good lacing. aroma was very malty some strong notes of nuts, bread and even a peat notes. Flavor was mildly sweet, somewhat fruity. Seemed thin though.

A unique and delicious beer. Not too strong, and not too heavy. A very dark color, and not too crisp (that might have been due to its handling). The elderberry’s were not overpowering. It wasn’t a seasonal, but i would say it would be a good winter beer. I will definitely try it again. Quite delicious.

An altogether pleasant and enjoyable session experience for this user. Couldn’t really make out the elderberries but could make out the very Scottish sweetness. Reminded me of Celebrator.

mild carbonation, with delicious notes of elderberrry, but no lambic sweetness here. definitely has a rich roasted flavor.

Pours near black with reddish hues and a fully receding light tan head. Aroma of blackberries, raisins, vinous, toasted malts, wispy caramel. Taste is lightly sweet, dark chocolate, plum, peppery, with a lightness in the finish. Mouthfeel is medium bodied with wispy carbonation. Very interesting and enjoyable beer. A nice mix of fruitiness and darker malts.

500ml bottle Black, thin beige head. Berry-sweet aroma, not overpowering. Very rich burnt taste, some espresso. again not overpowering. Very balanced, covers the alcohol completely.

Had this beer on 1/9/2006. Aroma is a deep roasted malt scent. Color is black with light carbonation and tight head. Taste is sweet and toasted. Starting with a medium body it goes down with a light crisp feel. Finish comes in with a bright burnt like toasted flavor of malt that is backed by an easy bitterness and a faint berry flavor. Overall it a very good beer and seems to hit what they want and is very drinkable.

Bottle from the LCBO, which was packaged with three other beers from the brewery. Pours very dark with a small tan head. It’s appearance reminded me of a stout, and when I held it up to the light I couldn’t see through, and felt like I was regarding the darkness of my own soul... Aroma is fruity, and reminded me somewhat of an abbey ale. This beer is thick on the palate, and in wine terminology it has long legs. The predominant flavour was a dark fruity sweetness, which conjured up images of dates. I couldn’t 100% place it, and I suppose I should go out and taste an elderberry. A tasty brew, but not as satisfying as the Alba.
