Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

bottle - Pours black with a very thin head. The aroma has roast malt, some dark fruit, and a hint of chocolate. The flavor runs along the same lines and puts me in mind of a fruit stout. It’s fairly sweet and medium bodied. I wouldn’t call it great, but it’s quite drinkable and an interesting brew.

330 ml bottle. Black color. Big, brown head- Berries and fruit, coffee, dark chocolate, leather. Lovely, but a bit to thin too get very high score.

Pours an opaque black with a dark tan head that leaves a lot of lacing. Nose is licorice, berry, and earthy. Flavor is smooth and with much depth. Hearty like a stout with roasted qualities, but just a bit of hearty berry edge. Feel is thick with character, but with a lower carbonation. Drinkable? This is one brewery that I want to try everything they put out. Unique, well balanced, and worth the time, money, and pleasure.

12 oz bottle poured into a pint glass black with a beige head quickly goes to lace. Toasted malts, chocolate aroma some fruity sweetness Lightly sweet fruit, coffee just a hint of a bitter finish Wonderfully creamy mouthfeel Great ale hope to find it again

(Bottle, Haket, Gothenburg, 1 Aug 2007) Black colour with brief beige head. Roasted, malty nose with notes of chocolate and liquorice. Roasted, malty taste with chocolate, coffee, liquorice, notes of citrus and elderberries. Slightly tarry. Very complex beer with the elderberries lingering nicely in the background. Nice!

Bottle. Deep, nearly opaque, mahogany pour that produces a healthy brown head that slowly subsides leaving a spotty lace. I’m not sure what elderberries smell like, but that must be the origin of the strong fruit aroma. Additionally, I detect some treacle, and some pronounced herbal notes. Very interesting aroma overall, unlike anything else I’ve experienced. A quite smooth medium body is paired with low carbonation and a lasting chewiness. Neutral balance with a softly dry finish. I didn’t think I would care much for this, but it surprised me. Unusual, yet drinkable, and a pleasant departure from the usual fare.

Appearance: Another cola-brown beer with a brown foamy head. Smell: Soft berry fruitiness and hints of roasted malt. Taste: Nicely integrated dark berry taste with malt and charred coffee in the background. Some soft tannins contribute to an astringent finish. Mouthfeel: Medium-full and creamy. Drinkability: Very drinkable; while the berry flavour is noticeable, it’s not overpowering and the base beer is quite well done.
