Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottled. Pitch black colour, mediumsized brown head. Aroma is berries, wood, roasted malts. Flavour is sweetish roasted malts along with some wooden hints. Some berries and other stuff when it gets warmer.

Pitch black color, small off-white head. Herbal and wheaty aroma with roasted coffee notes. Porter-like flavor: toasted malts, slightly sweet (berries) and then some herbal notes - I really can’t say what they are (or is it elderberry). Interesting and even quite drinkable.

A Mes rate: Bottled from a bar in Manchester round the corner from This and That. Black and opaque with a tan head. Complex brew with dark malt, vanilla, lovely smoky peaty notes, very Scottish. A little barley in there too. Bitter hoppy finish balances it out really well. Great stuff.

Heather Ales makes some wierd beers and this is no different. I don’t even know what the eff an elderberry is but I don’t like it. Pours a dark black with no head. Looks old.Aroma of dark fruit. Tastes like old dirty wine with sand in the bottom. All dark fruit and heavy carbonation. I won’t be trying any elderberries anytime soon.

Bottled. ebony coloured beer with a thick lasting dark tan head. Aroma of vanilla, elderberry, light roasted barley Flavour is malty, coffee, cola, floraly, fruity berry aroma. finish is also flowery and a bit roasty. enjoyable beer

Dark brown-beige, thick and large head; collapsing over near-black beer. Slight coffeeish nose, bit sweetish, some liquorice and roasted malts. But as to fruitiness... Soft, sweet stout. Retronasal finally the sweetness gets some fruity, indeed even berry-ish flavour, but it is immediately put down again in the throat by the coffeeish roasted malts, that win over and slowly fade. Medium bodied. Seems to get a little bit of tannines, by the drying-out effect. A beer has to carry the fruits, when added. I’m not an elderberry expert, but either they’re very discreet, or have simply been used to scarcely. In any way, a sweet liquorice stout demands a forceful fruit antagonist. Might it be that the Heather brewers have lost faith in outspoken tastes? Thanks Craig, another completely new one to me.

Pours a dark ruby brown with a off-white head, sweet berry and some faint blueberry fragrances, faint brown ale aroma, some grassy weed fragrances, faint bitter berry and chocolate flavors, flavors were not big except the berry, not real interesting, little alcohol in the sip, very dry on the palate, this was so so…

Pours dark. I’ve never had an elderberry, so I presume the fruity aroma is elderberry. Nice roasted flavors. Very enjoyable.
