Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bouteille de 330 ml achetée à la LCBO (Ottawa, ONT). Arôme: Odeur de figues et de raisins avec une pointe de chocolat. Apparence: La couleur est noire opaque. Présence d’un mince col mousseux et d’une fine dentelle sur le verre. Saveur: Goût de petits fruits et de céréales grillées. Durée moyenne de l’arrière goût. Palette: Le corps est plein avec une texture légèrement vineuse. Faible effervescence en bouche. Présence de chocolat en arrière goût. (Rating #839)

Pours very black, with a good couple inches of thick tan foam. Decent lacing. Roasted grain aroma, like a good stout or porter. Nice. Tastes like a nice medium-bodied porter tastes, but with some lighter fruitiness to offset the roast and the thickness. I don’t exactly taste elderbery (my wife grows elderberries, I eat them a lot and am quite familiar with the taste), but there is a fruitiness in there. Medium carbonation. Some gentle hops in the aftertaste. Honestly, the smooth roasted flavor in this brew is the dominant taste, and it is quite good.

This ale pours a deep black color from a 33cl bottle. Small to medium sized white foamy head. Aroma is fruity (elderberry) with some malt and spice. A medium bodied ale. Malts are roasty malts and caramel. The fruit flavors are semi-sweet and are secondary to the malt flavors. Hops are slightly bitter and earthy. Interesting combination of flavors, it starts a touch sweet and fruity and moves towards a roasty maltyness. Nice carbonation. Mouthfeel is a touch thin. Finish is clean and crisp. Aftertaste is slightly bitter and roasty.

330 ml bottle. Purchased at The Holiday Wine Cellar in Escondido, CA. The brew pours purplish black with a half there tan head. The arroma is full of the sweetness of berries. The taste is slightly off putting and not quite like beer in anything I can think of. It tastes kind of like juice or something. The carbonation is totally off and in general its not good at all. Maybe I don’t know the style but yuck.

First beer I tried from the Historic Scottish Ales giftpack I got this past holiday. Pours jet back with almost no head. Aroma of fruits and chocolate. Taste is of bitter chocolate with hints of fruit with a nice bitter finish. A good start to this gift pack.

330 mL bottle in a gift pk from LCBO. App.: slightly reddish, deep brown with a fading mocha head. Aroma: sweetish raisins, dates and figs, fruity and a bit of chocolate. Palate: med.-thin body, fairly soft carbonation, somewhat effervescent. Flav.: chocolatey fruit, almost like black licorice (the fake stuff), a bit of hops in the background? A touch of sweetness and a touch of bitterness and alcohol in the finish. I like the combination of fruit and dark malts. My fav. of the gift pack.

The bitterness, burnt malts and alcohol burn were all there, with that distinct Williams yeast profile (that I’m not crazy about) and a hint of jammy berries in there. In this case the flavour wasn’t back up by enough thickness. It was too thin and weak for it to be truly enjoyable, but makes a highly quaffable brew. I could easily down a pint of this bastard.

12 oz. bottle- color of brownish purple , with medium tan quickly departing head - nose of malts , mold , cocoa , hopps , and dark red fruit – taste of , dark red fruit , earthy , red wine , chocolate , and malts - body medium , and creamy – aftertaste of malts , chocolate with hint of jammy red wine (zin)
