Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

12 oz. bottle- color of brownish purple , with medium tan quickly departing head - nose of malts , mold , cocoa , hopps , and dark red fruit – taste of , dark red fruit , earthy , red wine , chocolate , and malts - body medium , and creamy – aftertaste of malts , chocolate with hint of jammy red wine (zin)

Bottle. Black, dark tan head, big and fluffy. Nose is of botanicals, obviously elderberry, but juniper, malts, sweetness, perhaps espresso. Taste is sweet, smooth, elderberry, roasted malts, coffee. Long inoffensive chocolate and botanical finish. Rather nice, pretty straightforward, easy to drink, a pleasure.

Big dark brown head over body that’s opaque black, except for dark red at edges. Sweet chocolatey aroma with milk notes. Taste is sweet and milky, with chocolatey roasty notes, and bitterish caramel and chocolate finish. Nice, mellow, and easy to drink, without too much complexity or challenge. (0.33l bottle.)

Thanks to Hatchy for sharing this. Pours a dark brown with a smaller dark tan head. Aroma of vinegar, vineous red wine characteristics, caramel and dark fruits. Aroma was roasty with more of the red wine, kind of dry.

Dark beer out of the bottle with some reddish glints around the edges when held to the light. Initial foamy beige head that falls back to an attractive whisp. Nose is of roasted grains (almost burnt) and berry. The flavor is dominated by the roasted grains, ash and almost burnt coffee. Having never had elderberries I don’t know if this is what they taste like, but there is a subtle berry tartness in the middle. If you like roasty in your beer then you will like this.

(Bottle 33 cl) Clear, almost black with a reddish hue and a small, creamy, light brown head. Some roasted malt in the aroma and distinct berries. Medium body with roasted malt notes and then a distinct, tart fruitiness from the berries with an astringent bitterness. Interesting. 101206

330 ml bottle - pours dark brown with a small mocha head, looking very much like a porter in appearance. Strangely sour fruit aroma, as well as some mossiness/earthiness and a spice as well. Very interesting flavour - almost minty to start, then giving way to some spices and tart berries. Finishes very much like a stout or porter, with the roasted mlats and some oatmeal sweetness coming through after all the previous flavours. Not something to drink all night, but certainly a beer to be sipped and savoured. Most unique. I had the strangest urge to don a cloak and utter dark oaths to pagan gods in a dead language after I drank this. Weird.

Heather Ale Ebulum Elderberry Black Ale 12 oz bottle Medium pour in an English Pint Best before 02/08, picked 12/06 Poured a dark mahogany with a small frothy somewhat lasting light brown and slightly pink head with a tiny ring of lacing. Smelt of moderate dark chocolate, dark berries, brown sugar, roasted burnt malt, vanilla. Taste was upfront moderate dark roasted malt and coffee bitterness, light dark chocolate, fruit and vanilla sweetness, and some tartness followed by a moderate to strong dark bread bitterness and dark chocolate sweetness and faint Elderberry essence on a long finish. Palate was medium bodied, slightly creamy, lively carbonated, with moderate astringency. Overall, the aromatics of the elderberries are there but subtle, overtaken by the rich nature of the darker malts. Satisfying.
