Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

BB dec 2005, thanks Oakes. Close to black, very dark, opaque, bottle-conditioned and wearing an initially large collar which recedes to a beige ring. Indeed a most interesting product with plenty of idiosyncratic character. Rather gentle, cohesive nose comprising dark cereals, soft alcohol sweetness, ink, prunes and blackberries flavors. Good malty body, firm and adequately irrigated by firm natural carbonation. May have thinned out a bit, but it still displays an interesting roundness. Tobacco suggestions emanate as the finish approaches. Surprising citric bite to the tannic fruits. Gentle roastiness never approaches the extremes, just pushing the fruitiness to further levels, with charcoal grains and ashey undertones.

Bottle, at Haket, Göteborg. Black colour, moderate but lasting creamy head. Strong aroma of roast malts, chocolate and elderberries. Flavour is mellow and rounded with chocolate and elderberries, surprisingly well balanced.

Bottled. Dark brown, with a think malty and chocolatey nose. Bitter, think and malty in the mouth with some yeast on the finish. An interesting flavor, just a bit expensive for what it is.

Bottle. Pours black with a small tan head. Aroma of burned malt with elderberry and some tobacco undertones. Malty flavor with elderberries. Dry bitter finish with some alcohol presence.

Bottle. Black beer with thin pale beige head. Good well rounded aroma, lots of dark fruit aroma, some vanilla, blue cheese too. Good deep mouthfeel, velvety, but a bit edgey too. Bit of charcoal. Dark fruits in mouth (damson, plums, dark cherry), juicy. Not a huge finish but the velvety choc and fruit flavours are excelletn.

The bigger, darker and downright fatter brother of the Fraoch. This one was a pleasure to drink, had aggression and subtlety all bagged into one tasty little number. Poured a deep, dark, brownish black with a well retained, beautifully presented creamy tan head that left some firm lacing. Smoky, molasses, liquorice, burnt grain and cured fish aroma with a touch of fresh sea air. Palate is creamy, almost silky and quite full for what I guess is a filtered ale. Deep, smoky, peaty malts and burnt fruit dominate the palate with just a touch of tangy, dark elderberries. Fills out well with liquorice and molasses finishing it off and lingering long in the mouth with a feint note of brine. Fairly simple flavour-wise but it does feel so good in the mouth. Best before June 2005. Pours black into a shaker. Vigorous pour produces mocha milkshake head. Head quickly recedes, but micro head creates cloudlike patterns on the surface throughout the experience. Roasted caramel and chocolate notes. Not quite flat -- silky and dry. Smoky chocolate palate front to back.
