Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Bottle. Pours a black almost black colour with a small tan head. Roasted malty aroma with some hints of chocolate. Roasted malty flavor with some hints of elderberries. Roasted malty finish with some bitterness.

Bottle. Nice, subtle roasted malt notes, with an lightly acidic, lightly vinous mouthfeel. Only slight hints of berrries. But if you had it blind, you may not pick out the berries. I thought this was a nice one.

11.2-oz. Nearly opaque black with ruddy brown glimmers at the edges. Ring of tan head. Huge malty richness with a neutral "berryesque" fruit sweetness on the nose. Also a fair amount of bread there. Medium body, medium carb. Some dark malt on the attack, with a fairly hollow mid-palate. The hop finish is like a dry, crisp bubble popping on the back of your tongue--all of a sudden it’s there.

Black with little head. Rich roasted malt aroma. Chocolate and toast with a fruity tartness in the finish, a little like sour cherries. Very smooth, medium bodied. No distinct elderberry character, but then I don’t think that is the goal anyway. If I didn’t know any better I would call this an excellent porter. Shared with Tyler Durden.

Dark black, thin tan head. More like a stout or porter, roasted malt, almost burnt tasting, dark chocolate, coffee, no fruit, good beer.

In the bottle. Pours dark brown to black with a thin brown head. The head consists of very fine bubbles. Quite an attractive beer. Aroma is of peat and smoke. Flavor is smokey, sweet and chocolatey. They employ a nice use of hops to neutralize any dominant medicinal taste. I’m not sure if the sweet fruitiness that I taste is elderberries, but there’s something that is certainly pronounced in the beer, fruit-wise.

From bottle. 330ml. Best before April 2007.

poured dark with slight ruby tint if held to the light just right. Nice 2-inch, tan head. Aroma of chocolate and berries. Flavor of roasted malts...almost burnt but pleasant, with chocolate notes very present. Slight berry and coffee notes in the aftertaste, none overpowering. Nice mix of flavors, althought I’m not sure what an Elderberry is (i’m told it’s close to a mulberry). However, not very complex. Carbonation was good. Dry finish. Medium to full bodied. Creamy mouthfeel.

pretty good very dark and sexy lookin. porter with some berry aftertaste instead of striaght coffee or chocalate. i liked this.
