Commercial Description:
Bottled. A cask version at 5.8% is produced in October and November.
"Elderberry Black Ale"
Introduced to Scotland by Welsh druids in the 9th Century, elderberry black ale was part of the Celtic Autumn festivals when the "elders" would make this strong ale and pass the drink round the people of the village. The recipe was taken from a 16th Century record of domestic drinking in the Scottish Highlands. Elderberries were used for many natural remedies to cure sciatica, other forms of neuralgia, influenza and rhumatism as they contain tannins and fruit oils.
Ebulum is made from roasted oats, barley and wheat boiled with herbs then fermented with ripe elderberries.
A rich black ale with fruit aroma, silky soft texture,soft roasted flavour and gentle finish.
Recommended with stewed and baked foods.
Drink lightly chilled from a straight glass.

Cask Handpump at the Beer House, Manchester 18/11/2001 Dark coloured and smooth on the palate. Fruity with a slightly bitter hop finish.

Bottled. Deep dark brown body with a purple hue, little or no head. Rich roasty, chocolate flavours, balanced by a mildly acidic fruity tone, all held together with a light, refreshing body that would be recognisable to lovers of Porter. This is a lovely drop and real surprise to be pulling out of the hat on a Tuesday night.

Assé spéciale cette bière, j’aime bien ce goût de fruit. Là si je peux en trouver du "elderberry".

Bottle. Dark, not see through, with medium off-white head. Very malty and vegetable aroma, slight fruit. Flavor is fruity, but very malty,and a little bitter. Very interesting, and tasty. Good beer.

Not that great but I did have it too cold. It should have been closer to room temperature. Nice dark color and decent aroma - tastes a bit like a porter.

All I could think of while drinking this was Monty Python and the Holy Grail. So I think I was laughing most of the time while trying to rate this one. Dark, deep bron color, with just a little tiny head that fades into a creamy rim. A strong medicinal aroma, alchohol and dark fruits. The texture is almost oily and tannic, strange mouthfeel. Some bread, roasted malts and a strange fruit flavor I am assuming is elderberries. This just kind of is what it is, not alot happening with this beer but worth trying.

11.2oz. bottle. Dark brown, nearly black with a medium sized tan head that quickly dissipated. Mild aroma of roasted malts and fruit(I have no idea what elderberries smell or taste like). Berry flavor comes out more in the flavor with the roasted malts in the background. Bitter aftertaste.

Pours black, when tilted dark red/brown. When coaxed vigorously it has a very small head that dissipates quickly. Nose is pleasantly musty with a hint of malt and elderberry. Lively on the palate at first with no distinct taste immediately. Charred malt creeps in followed by a subtle elderberry hoppiness. Its a strange combination that really works for me. Not a robust ale by any means, but very enjoyable none the less.
